    Virgin Oak was Deanston's first attempt at doing something unexpected with the house honey. This bottle predates the redesign — same idea, older packaging.

    Deanston Virgin Oak Old Version is a Highland Single Malt Scotch Whisky matured in traditional oak casks with a final maturation in new American oak casks and bottled at 46.3% without chill filtration and without added colouring.

    The release comes from an earlier version of Virgin Oak, which Deanston later gave a new design. The idea is unchanged: fresh, untreated casks lift the pale, fruity and naturally honeyed house style with spice and vanilla sweetness. Deanston has distilled in a converted cotton mill by the River Teith since 1966 and uses no peat at all.

    Tasting notes

    Nose

    Clean, fresh and inviting. Citrus, malt, vanilla and lightly spiced oak, with touches of honey, fresh apples and a mild nutty note.

    Palate

    Soft but lively. Vanilla, caramel, citrus and pale fruit, where the virgin oak casks contribute warm spice, a hint of pepper and a creamy sweetness.

    Finish

    Medium and lightly spiced, with vanilla, oak and a soft honey note.

    Deanston sends surplus electricity from its own hydroelectric plant out to the grid. The distillery uses nowhere near everything the River Teith can deliver, and the money from the sold power goes back into production.

    What is the difference from the current version?

    The bottle design. The contents follow the same recipe with a new American oak finish at 46.3%, but the appearance places the bottle before the range's most recent facelift.

    What does virgin oak mean?

    New oak casks that have never held spirit or wine. They give stronger cask influence than refills and are therefore typically used for a shorter finishing period.

    Is it worth keeping?

    Discontinued bottle designs from a range still being made are a collector niche. The bottle is easy to date by appearance, which makes it useful as a reference point.

    Is it peated?

    No. Deanston uses no peat at all in its production. For smoke, head towards Islay Whisky.

    How is it best enjoyed?

    Neat in a tulip glass. At 46.3% it takes a couple of drops of water, which soften the spice from the new wood and lift the citrus.
