Big Peat Douglas Laing Blended Islay Malt Whisky is the series' core expression, a blend of single malt whisky from several Islay distilleries, bottled at 46%. Big Peat was launched in 2009 by independent bottler Douglas Laing & Co as the first in the company's 'Remarkable Regional Malts' series. The idea was to create the 'ultimate distillation of Islay' by blending single malt whisky from several of the island's distilleries, including Caol Ila, Bowmore and Ardbeg, without using grain whisky. Big Peat is non-chill filtered, with no colouring added. Each year Douglas Laing releases a Christmas Edition of Big Peat at natural cask strength, and at Islay's Fèis Ìle whisky festival, special limited editions are regularly released.

The whiskey is originally matured in former bourbon casks from the renowned Brown-Forman in Kentucky, made from American oak at 200 litres with heavy charring. Boann Distillery filled these casks with a Single Pot Still distillate made from malted barley, unmalted barley, oats and rye, all Irish grains grown locally. The distillate is triple distilled, giving a cleaner and more rounded base character, before the finishing marsala cask adds body and sweetness.

Behind the brand stand the Islay Boys, Donald MacKenzie from Port Charlotte and Mackay Smith from Portnahaven. Both are from the island and started blending and bottling whisky themselves with the aim of making something that tasted of Islay without costing a fortune in marketing.
Battle Axe is the most powerful of the expressions in the range and is bottled at high strength without filtration. The peat is present but held back in favour of fruit from the cask, which makes the profile different from the classic smoke monsters of the island's south coast.

The distillery sits on the coast in Sutherland, where the original Clynelish was founded in 1819 by the Marquess of Stafford. Clynelish is today one of the main ingredients in Johnnie Walker, but the 14 year old is where the distillery character stands at its clearest: maritime, waxy and with a freshness you do not find further south.

Deerstalker 12 Years Old is a Highland Single Malt Scotch Whisky from Balmenach, matured in oak casks and bottled at 43% without chill filtration.
Balmenach sits beside the village of Cromdale, right on the line where the Highlands slip into Speyside. James MacGregor founded the distillery in 1824, and it is owned today by Inver House. Almost all of the spirit disappears into blends, which is why so few bottles carry the Balmenach name on the front.
The Deerstalker range comes from Aberko in Glasgow, a house that has held on to one principle throughout: the whisky is bottled without chill filtration. It is a small decision with a large consequence, because the oils that would otherwise be filtered out stay in the bottle and give the whisky a fuller texture.

Fresh and gently tart. Green apple and peach arrive first, then a dusting of vanilla underneath and a dry, almost powdery grain note reminiscent of the air inside an old warehouse.

Balmenach belongs to the small handful of Scottish distilleries still condensing their spirit in worm tubs, long coiled pipes submerged in cold water outside the stillhouse. The method is slow and takes up space, but it produces a heavier, meatier spirit than any modern condenser can deliver.
