Mortlach Whisky

In Dufftown, whisky's unofficial capital, Mortlach stands as the town's first legal distillery, founded in 1823. Its famous 'echo' distillation process - where the spirit runs 2.81 times through the stills instead of the usual two or three - has earned it the nickname 'the Beast of Dufftown'. It's a whisky that insists on being complicated, when simplicity would have been far easier.

    The whisky comes from an undisclosed Highland distillery. It is an entirely ordinary arrangement where a distillery sells casks on without wanting its name on the label, and the buyer bottles them under a brand name of their own.

    The result is an approachable and uncomplicated single malt that has become a standing recommendation for anyone finding their way into the style. There is no smoke and there are no sharp edges, and 40% means it asks for neither water nor practice. The colour is deep gold and the sherry influence runs all the way through.

About Mortlach Whisky

Mortlach is the oldest distillery in Dufftown, a town that otherwise prides itself on housing seven whisky distilleries within its boundaries. What sets Mortlach apart from its neighbours is a distillation process so eccentric it almost defies logic: six stills, three wash and three spirit, work together in a complex system where the spirit is distilled somewhere between two and three times. Mortlach was founded in 1823 by James Findlater, making it the oldest licensed distillery in Dufftown. It is now owned by Diageo, the world's largest spirits producer, which in 2015 invested heavily in doubling the distillery's capacity. The rebuild preserved the old stillhouse architecture almost identically while significantly increasing production capability - proof that Diageo wanted to preserve Mortlach's eccentric character rather than standardise it away.

Production & Style

Mortlach's famous 2.81-times distillation dates all the way back to 1896 and has become part of the distillery's DNA. The system involves a complex interplay between the six copper stills, where only part of the spirit undergoes the full triple distillation while the rest is distilled twice - hence the strange, non-round number. The result is an unusually heavy, sulphury and meaty spirit that differs markedly from its lighter, more floral Speyside neighbours.
