  Evan Williams Kentucky Straight Bourbon Whiskey is the brand's core expression, bottled at 40%. Evan Williams is named after the Welshman who, according to tradition, opened Kentucky's first commercial distillery on the banks of the Ohio River in 1783. When the Shapira brothers founded Heaven Hill Distillery in Bardstown in 1935, shortly after Prohibition ended, they chose to honour Williams' name for their flagship bourbon in 1957. Today Evan Williams is the second best-selling Kentucky Straight Bourbon brand in the world, second only to Jim Beam, and is made from a mash bill of 78% corn, 10% rye and 12% malted barley.

  Mellow Corn Kentucky Straight Corn Whiskey is an American Straight Corn Whiskey, bottled at 50%. The whiskey was originally created by Medley Distilling Company in 1945 and came under Heaven Hill's ownership in 1993, after changing hands several times along the way, including through Renfield Importers and Glenmore Distillery. Unlike most corn whiskeys, typically sold as unaged moonshine, Mellow Corn is aged for at least 4 years in used bourbon casks. The mash bill consists of at least 80% corn, supplemented with malted barley and rye, giving it a sweeter, softer profile than traditional bourbon. The distinctive bright yellow label has remained largely unchanged throughout the whiskey's lifespan.

  Parker's Heritage Collection 8 Year Old Kentucky Straight Malt Whiskey is part of Heaven Hill's annual limited edition series, launched in 2007 to honour then-master distiller Parker Beam, matured for at least 8 years, bottled at 54%. In 2010, Parker Beam was diagnosed with ALS (Amyotrophic Lateral Sclerosis) and fought publicly against the disease until his death in January 2017. Since 2013, a portion of proceeds from each bottle in the series has gone toward ALS research through the Parker Beam Promise of Hope Fund, which has together raised over $1.4 million.

Buffalo Trace Distillery in Frankfort, Kentucky, is the oldest continuously operating distillery in the United States. The site was first built as a commercial distillery in 1858 and later taken over by Colonel Edmund Haynes Taylor Jr., often called 'the father of the modern bourbon industry'. The distillery continued production through Prohibition under a medicinal licence and has been owned by the family-run Sazerac Company since 1992.
