Paranubes began as a small, craft-based project in the Oaxaca highlands, where local producers have grown sugar cane for generations without it previously being distilled into rum of international standing. By distilling in pot stills at high altitude and using fresh cane juice rather than molasses, the producers have created a rum true to the Mexican agricole tradition.

Production & Style

The rum is distilled in traditional pot stills from fresh, pressed cane juice, which combined with the high altitude gives a herbal, green character quite different from molasses-based rums.
