Olmeca Tequila

A two-tonne volcanic stone crushes the agave, the juice is drawn from the fibres, and the result is a sweetness no modern machinery can replicate. Olmeca Tezón uses only the ancient Tahona method, while sister brands Olmeca and Olmeca Altos offer more accessible interpretations. This is tequila in three tempos - from everyday to craft.

    2,100 metres above sea level, where the soil runs red with volcanic ash and the air turns thin, blue agave grows slower and sweeter. Here, in the highlands of Los Altos de Jalisco, two travelling bartenders and a local maestro tequilero came together on a recipe that became Olmeca Altos Plata.

    Olmeca Altos Plata is a 100% agave Mexican Blanco Tequila, bottled at 38%.

    The tequila comes from the Destilería Colonial de Jalisco distillery in the town of Arandas, deep in the Los Altos highlands, where the agave is left to mature for seven to eight years in mineral-rich volcanic soil. Olmeca Altos was founded in 2009, when bartenders Henry Besant and Dre Masso travelled to Jalisco and teamed up with maestro tequilero Jesús Hernández, who still leads production today. The agave is slow-cooked in brick ovens for three days, then crushed using both the centuries-old tahona stone and a modern roller mill, a combination that gives the tequila both punch and smoothness. The Plata expression is bottled straight after distillation in copper stills, with no ageing, so the pure character of the agave shines through.

    Nose

    Cooked agave meets sweet, fruity candied orange and a zesty tang, spiced with a touch of vanilla, caramel and soft woody undertones.

    Palate

    Well-balanced, with vibrant lime, delicate herbal tones and a fresh character that lets the agave carry through.

    Finish

    Crisp and clean, with a last trace of citrus that lingers long after the final sip.

The agave is grown in the Los Altos highlands of Jalisco, hand-harvested and slow-roasted in brick ovens before being distilled in copper stills. Unlike Olmeca Silver and Reposado, the Altos range is made entirely from blue agave with no added sugar syrup, and the Reposado expression has won a long list of medals at international spirits competitions since its launch.

About Olmeca Tequila

Olmeca spans three distinct tequilas from Pernod Ricard: Olmeca (a classic mixto tequila), Olmeca Altos (100% agave) and Olmeca Tezón (100% agave and 100% Tahona-made). For the newcomer, Olmeca offers an easy way into the world of tequila; for the connoisseur, Tezón is especially interesting because it holds on to the Tahona method, where the agave's core is crushed under a two-tonne volcanic millstone, a technique most modern producers have replaced with industrial mills.

History & Background

The Olmeca name draws on Mexico's ancient Olmec civilisation and was developed as part of Pernod Ricard's tequila portfolio to cover several tiers of tequila quality under one umbrella. Over time the brand expanded to include the Altos line, created in collaboration with respected bartenders to target the cocktail market, and Tezón, which deliberately holds on to the traditional, labour-intensive Tahona method as a counterweight to the industry's general mechanisation. The range today also includes more experimental releases such as a cocoa tequila.
