    2,100 metres above sea level, where the soil runs red with volcanic ash and the air turns thin, blue agave grows slower and sweeter. Here, in the highlands of Los Altos de Jalisco, two travelling bartenders and a local maestro tequilero came together on a recipe that became Olmeca Altos Plata.

    Olmeca Altos Plata is a 100% agave Mexican Blanco Tequila, bottled at 38%.

    The tequila comes from the Destilería Colonial de Jalisco distillery in the town of Arandas, deep in the Los Altos highlands, where the agave is left to mature for seven to eight years in mineral-rich volcanic soil. Olmeca Altos was founded in 2009, when bartenders Henry Besant and Dre Masso travelled to Jalisco and teamed up with maestro tequilero Jesús Hernández, who still leads production today. The agave is slow-cooked in brick ovens for three days, then crushed using both the centuries-old tahona stone and a modern roller mill, a combination that gives the tequila both punch and smoothness. The Plata expression is bottled straight after distillation in copper stills, with no ageing, so the pure character of the agave shines through.

    Cooked agave meets sweet, fruity candied orange and a zesty tang, spiced with a touch of vanilla, caramel and soft woody undertones.

    Well-balanced, with vibrant lime, delicate herbal tones and a fresh character that lets the agave carry through.

    Finish

    Crisp and clean, with a last trace of citrus that lingers long after the final sip.
