Bimber Whisky
Bimber WhiskyThe Bimber distillery was founded by a group of whisky enthusiasts, all with a mission to produce a high-quality single malt whisky with great character, using only traditional methods. Bimber uses 100% organic barley, which they cultivate themselves. The barley is floor-malted and hand-milled manually, after which it undergoes slow fermentation for seven days in washbacks made of wood from Bimber's own cooperage. During distillation, direct fire is employed instead of indirect heat to heat the small copper pot stills. The maturation of the whisky takes place in specially selected quality casks, where the whisky is eventually blended and bottled. The distillery is young, and on May 26, 2016, they filled their first casks with new make spirit. Three years later in 2019, the single malt whisky "The First" was released, and it sold out in just three hours after the release of 1,000 hand-numbered bottles. |
