Bimber Denmark Edition Ex-Bourbon Cask is a Single Malt London Whisky from a single American ex-bourbon cask, cask no. 169, bottled at full strength at 58.7% ABV.

The bottle comes from Bimber's Country Collection, a series of twenty single casks the distillery selected in 2020 for twenty different countries, Denmark among them. Cask no. 169 was filled in May 2016, among the very first casks Bimber ever laid down, and was bottled in October 2020 in a limited run of 263 individually numbered bottles exclusively for the Danish market.

That makes this a genuine rarity: a single cask whisky never available anywhere outside Denmark, drawn from one of the casks that laid the foundation for Bimber's reputation.

Tasting Notes

Nose

Sweet red fruits and creamy vanilla meet soft oak spice, green apples and a touch of caramel, giving the nose a fresh, slightly tart edge.

Full-bodied and oily with ripe apple and baked pear, where caramel and warm vanilla tie the sharp bourbon spice together with a hint of honey.

Finish

Long and spiced with lasting oak structure, where the sweet fruit notes gradually give way to a dry, faintly peppery close.
