    Ireland's first commercial liqueur was born as a solution to a surplus problem at a whiskey distillery.

    Irish Mist Honey Liqueur is an Irish whiskey liqueur, bottled at 35%, based on a blend of Irish whiskey, honey and natural aromatic spices. The liqueur is considered the first commercial liqueur produced in Ireland, with commercial production beginning in 1947 in Tullamore, County Offaly. The recipe originated as an idea from Desmond Williams, grandson of the founder of the Tullamore Dew whiskey company, as a way to economically use up the company's surplus whiskey stock. The recipe draws on an ancient tradition of heather wine dating back over 1,000 years. The company was renamed the Irish Mist Liqueur Company in 1953, and distilling in Tullamore ceased the following year. The brand has since changed hands several times, from Cantrell & Cochrane in 1985, to William Grant & Sons in 2010 alongside Tullamore D.E.W. and Carolans, and most recently to Heaven Hill in 2017.

    Jack Daniel's Honey is a Tennessee Whiskey-based honey liqueur built on Jack Daniel's classic Old No. 7, with natural honey flavour added, bottled at 35% ABV.

    Jack Daniel's Distillery was founded in 1866 by Jasper Newton "Jack" Daniel in Lynchburg, Tennessee, and is officially registered as the USA's first distillery. All production still takes place at the same site, where the whiskey is filtered drop by drop through almost 3 metres of sugar maple charcoal before going into new, charred oak barrels - the so-called Lincoln County Process that defines Tennessee Whiskey. For the Honey edition, a natural honey flavour is then added, making the style sweeter and more accessible than the core range's Old No. 7.

    Smag

    The nose is marked by honey, vanilla and caramel from the underlying whiskey. The taste is sweet and light, with a distinct honey character on top of Jack Daniel's characteristic round softness, while the finish is short and sweet, without the spicy edge found in the pure Old No. 7.

The Jim Beam distillery in Clermont, Kentucky, dates back to 1795, when Jacob Beam sold his first barrel of bourbon under the name "Old Jake Beam". The family has made bourbon in Kentucky for over 200 years and seven generations, and the brand took its current name in 1943 in honour of James Beauregard "Jim" Beam, who rebuilt the distillery in 120 days after Prohibition ended.

    It's meant to be enjoyed on the rocks or in cocktails rather than neat like a regular bourbon.

    On the small island of Årø, tucked into the Little Belt where vines grow closer to the water than almost anywhere else in Denmark, sits a bottle that brings together the island's two sweetest treasures: the grapes and the bees. Honningsyp from Årø Vingård is made with honey from the vineyard's own hives in the apple orchard, and the result is soft, golden and full of late-summer warmth.

    Årø Vingård Honningsyp Liqueur is a Danish honey liqueur from Årø Vingård, bottled at 16.5%. The bottle belongs to the vineyard's small range of liqueurs, made alongside the estate's wines, on the same soil and with the same philosophy of using what the island itself provides.

    The vineyard's story began in 2004, when Svend Aage planted the first 125 vines on Årø after visiting a small winegrower in Christiansfeld. It grew year by year, and in 2015 Lisbeth and Jakob Lei took over the estate, just before a harvest, with plans to turn it into a year-round destination built around wine, apples and honey. Today the fields hold more than 5,000 vines and 1,200 apple trees, and the beehives dotted around the orchard supply the honey behind this very bottle.

    Honningsyp is an old Danish tradition: spirits sweetened with honey until they turn round, sweet and gentler in strength. Årø Vingård's version is made with honey from its own bees, giving the liqueur a softness that only comes when the raw ingredient hasn't travelled far.
