About OriGin CPH

OriGin CPH is the creation of Martin Nygaard and Carsten Vikke in Måløv near Copenhagen, where the pair have built a small, experimental microdistillery centred on a vacuum still with a capacity of just 12 litres. For the newcomer this means an unusually crisp, elegant gin; for the geeky spirits enthusiast, the method itself is fascinating - because the pressure in the vacuum still lowers the boiling point from 78.3 to around 30 degrees, preserving far more volatile aromas than normal distillation allows.

History & Background

OriGin CPH began when Martin Nygaard and Carsten Vikke decided to invest in one of the market's most specialised vacuum stills, a type of equipment normally found in laboratories rather than the spirits industry. By distilling under vacuum and thereby significantly lowering the boiling point, the pair managed to preserve far more of the crisp, volatile flavour notes that are usually lost during conventional distillation. It made their small Zealand-based distillery one of the geekiest names on Denmark's micro-gin scene.
