Stolichnaya Vodka

In 1938, the recipe for one of the Soviet Union's state vodkas was registered in Moscow, but it took ten years before Russians themselves could drink it. In 2022 the brand changed its name from Stolichnaya to Stoli, as a direct protest against Russia's invasion of Ukraine.

    Three litres of vodka has weight to it. You do not lift it with one hand, and you do not push it to the back of the cupboard. The elit magnum is built to stand in the middle of the table where everyone can see what is being poured.

    Elit Vodka is a Latvian Vodka from Stoli Group, distilled from wheat and bottled at 40% in a 300 cl magnum.

    The large format changes nothing about the liquid but everything about the occasion. Three litres covers a full gathering, and because the bottle has to be handled with both hands, the pour itself becomes part of the evening. The shoulder is broad, the neck is long, and the glass is heavy enough that the bottle stands steady even when half empty.

    Inside sits the top of the house range. The wheat is distilled three times to alpha grade at Latvijas Balzams in Riga, and the spirit is cut with artesian water from a borehole under the plant. It is then chilled to minus 18 degrees and drawn slowly through ion charged filters — the freeze filtration the whole elit expression is built around.

    The cold is not decoration. At that temperature the heavier alcohols and oils behave differently and allow themselves to be caught in the filter, which is why the texture ends up as thick and round as it does. A magnum gives you ample opportunity to test the claim.

    Tasting notes

    Nose

    Discreet and grainy. Dry baked goods run across the whole aroma, with a small lift of citrus peel on top.

    Palate

    Thick and round in the mouth. Sweetness from the wheat builds slowly and gives way to a dry, lightly peppered stripe.

    Finish

    Clean and coolly drying. It lingers briefly and leaves the tongue with no stickiness at all.

    Turn the lights off and the bottle almost disappears. Matte black glass throws back no reflection, and the engraved circles cut across one another like rings around an eclipsed moon. Night Edition was drawn from the things you only see once the sky is dark enough.

    Elit sits at the top of the Stolichnaya family and is made at Latvijas Balzams in Riga, one of the oldest and largest spirits plants in the Baltics. The wheat is distilled three times into an alpha grade spirit, the purest classification available to work with, and then cut with artesian water drawn from roughly 200 metres below ground.

    The final step is the house signature. The spirit is chilled to minus 18 degrees and then drawn through ion charged filters so slowly that the process can run for hours. The cold holds the heavier compounds back, so they stay in the filter rather than in the glass. The vodka is then left to rest before bottling.

    Night Edition is the same liquid in different clothing. The bottle is a matte black version of the usual elit shape, and the engraved circles borrow from eclipses and other rare night sky events. This is a bottle designed for evening light rather than daylight.

    Tasting notes

    Nose

    Cool and reserved. The aroma is dry wheat with a touch of lemon peel and a breath of anise behind it.

    Palate

    Silky and almost free of burn. A discreet grain sweetness fills the middle before white pepper lays a thin stripe across the tongue.

    Finish

    Cool and clean. It fades quickly and leaves a sense of mineral and cold air behind.

That is not a marketing word but an official classification with limits on aldehydes, fusel oils and methanol that sit far above what ordinary neutral alcohol has to meet.     Soft and full with an oily sensation across the tongue. Sweetness is low, and a light mineral tone runs underneath it all.

    Short, clean and cool. Nothing lingers, and that is exactly the intention.

    Raspberries are hard to pin down. Fresh off the cane they are tart with a green edge; cooked down into jam they turn dark, round and almost syrupy. This bottle sits closer to the pan than to the cane, and that is a deliberate choice.

    Stolichnaya Raspberry Flavored, known as Stoli Razberi, is a Latvian Vodka made from wheat and rye with raspberry flavour, bottled at 37.5%.

    The flavour range drove the house for years. When bartenders in the 1990s started building drinks around colour and fruit rather than dry classics, Stolichnaya already had a shelf of expressions ready, and the raspberry became the most asked for of the lot.

    The base is the same as everything else in the range. Wheat and rye go through columns, get blended with Latvian artesian water and filtered through quartz sand, birch charcoal and woven cloth. Production sits at Latvijas Balzams in Riga, not in Russia, however much the name pulls that way.

    The raspberry is added after distillation. That means the fruit lives in the aroma and the front of the palate while the rye still registers behind it as a dry streak. It is exactly that combination that stops the bottle collapsing into sweetness once you mix it with cranberry or lemon.

    Tasting notes

    Nose

    Raspberry jam and boiled sweets, with a twist of lemon peel at the edge. The aroma is sweeter than the palate promises.

    Palate

    Full berry with a creamy texture. Halfway through, the grain arrives as a dry, spiced streak, and there is more acidity than the nose suggests.

    Finish

    Short to medium. The sweetness lets go quickly and leaves a faint stalky bitterness from the fruit.

    A red band, gold script and a drawing of a hotel by Red Square. The label has barely moved since the 1950s, and it has become one of the most recognisable pieces of graphic design in the whole drinks trade. The bottle behind it is filled in Riga today.

    Stolichnaya The Original is a Latvian Vodka made from wheat and rye, bottled at 38%.

    The recipe comes out of the Soviet era. The trademark was registered in 1938, and in 1953 the vodka was shown at the international trade fair in Bern, where it took a gold medal. After the Soviet Union broke up, the rights ended in a dispute between the Russian state and SPI Group, and the result is that two Stolichnaya bottles exist in the world: one for the Russian market and one for the rest of us.

    The one you find here comes from Latvijas Balzams in Riga, where SPI Group placed its production. Wheat and rye run through columns, the spirit is blended with Latvian artesian water and filtered first through quartz sand, then through birch charcoal and finally through woven cloth. Since 2022 the raw spirit has been sourced outside Russia.

    The rye is what sets it apart from the many pure wheat vodkas. It gives a bready, lightly peppery character that keeps the bottle from being wholly neutral, and it is the reason the vodka still turns up in everything from a Bloody Mary to a shot alongside pickled herring.

    Tasting notes

    Nose

    Fresh rye crust and a hint of aniseed. A light sweetness sits underneath and only steps forward once the glass has rested.

    Palate

    Dry and direct. The grain fills the middle with something floury before a clear stripe of pepper rises and takes over.

    Finish

    Medium and warm. The pepper stays at the back of the mouth, and a touch of lemon peel turns up right at the end.
