Smooth Ambler take their Greenbrier Gin at 60% and age half the batch in virgin oak American barrels and the other half for in barrels previously used to age Old Scout bourbon. Smooth Ambler says that this three month dual ageing process produces a gin that, “sips like a gin and finishes like a whiskey.”
