Lindores Whisky

Lindores Abbey is arguably where whisky was born. It was here, in 1494, that a monk named Friar John Cor was first recorded distilling "aqua vitae" for the Scottish king, an entry now regarded as the world's oldest written record of Scotch whisky. After five centuries of silence, the distillery rose again on the very same ground, with a fermentation time of 117 hours, among the longest in the whisky world.

About Lindores Abbey Whisky

Lindores Abbey has one of the whisky world's longest fermentation periods, a full 117 hours, which combined with an unusual sister-stills setup produces a malt of remarkable character for its young age. The distillery has a wash still named Dodo and two spirit stills, Puppy and Gee, named after the owners' two daughters, a production method that doubles the contact with copper. For collectors, the site's status as whisky's birthplace is the core of the story, while newcomers will notice an unusually full, fruity character even in the younger releases.

History & Background

In 1494, the Scottish exchequer rolls recorded that the monk Friar John Cor was given malt "to make aqua vitae" for King James IV, the oldest known written evidence of whisky production in Scotland. The Lindores Abbey monastery fell into ruin over the centuries, but in 2017 the distillery rose again on the very same site, founded by the McKenzie Smith family, who own the surrounding farm. The rebirth was a deliberate tribute to the site's unique place in whisky history, and the distillery now markets itself as whisky's birthplace.
