Edinburgh Whisky Co

Edinburgh Whisky Co is the new voice among Scotland's independent whisky merchants, based in the capital itself. The company's first series, The Discovery Collection, brings together carefully selected bottlings from distilleries across the country. It's decades of combined expertise concentrated in a young company name.

    Item no.: 053333-885

At Port Askaig on Islay's north-east coast, where the tidal current sweeps past whitewashed buildings and the Paps of Jura rise across the sound, stands a distillery that spent decades feeding Johnnie Walker's blends in near-anonymity. Here it appears under its own name, bottled by a young whisky house from Edinburgh.

    Expert's description

Caol Ila 8 Years Edinburgh Whisky Co The Discovery Collection is an Islay Single Malt Scotch Whisky matured in refill hogsheads and bottled at 46.3% without chill filtration and with natural colour.

Caol Ila Distillery, founded in 1846 at Port Askaig, is Islay's largest distillery and a key supplier to Diageo's blends – primarily Johnnie Walker. Only a small share is bottled as single malt, giving each independent release a degree of rarity.

Edinburgh Whisky Co is a family-owned independent whisky house from Edinburgh that assembled the Discovery Collection to celebrate Scotland's whisky regions. The series covers Speyside, Highland and Islay, and is always bottled without artificial colour or chill filtration.

    Palate

Creamy and round. Warm smoke integrated with fresh fruit notes and a light hint of honey. The balance holds throughout.

    Finish

About Edinburgh Whisky Company

Edinburgh Whisky Co is an independent whisky merchant based in Edinburgh, selecting and bottling exclusive Scotch whiskies. For newcomers, The Discovery Collection is an accessible way into independent bottlings; for collectors, these are early releases from a new company, where the first bottles may prove attractive as the name gains recognition.

History & Background

The company was started by people with backgrounds in whisky trading and collecting, driven by a shared frustration that many good casks never saw the light of day as standalone releases. Today they select casks from both well-known and undisclosed distilleries, often letting the distillate's quality speak for itself ahead of the name.

Production & Style

Selection happens cask by cask, often at natural strength and without added colouring or chill-filtration, an approach prioritising authenticity over consistency.

Signature Style

Cask Strength, Authentic, Varied
The flavour profile varies from cask to cask, but common to all is an unfiltered, honest style letting the true character of the distillate speak.
