Ærø Rum

Ærø Rum is made in an old wash house in the backyard of a merchant's courtyard in Ærøskøbing, where Michael Nielsen began dreaming in 2013 of alcohol made from local Ærø ingredients. Today that dream is a fully working distillery.

    Ærø Danish Solera Rum is a Solera Rum distilled and matured on Ærø and bottled at 48%.

    The rum comes from Ærø Whisky, a small micro-distillery in the heritage-listed wash house behind the Handelsgården merchant's house in Ærøskøbing, founded by ship's captain Michael Nielsen in 2016. The rum is made from sugarcane molasses and matured in a Solera system, a method known from the sherry industry, where young rum is added at the top of the casks while older, more mature rum is drawn from the bottom. The casks previously held Oloroso and PX sherry from Spain, and only around 300 bottles of Solera Rum are bottled each year.

    Rich and sherried with dried fruit, caramel and a hint of molasses.

    Full-bodied and round with sherry sweetness, dark fruit and a warm spiciness from the molasses.

    Finish

    Long and sweet with persistent sherry tones and a gentle warmth from the 48%.

About Ærø Rom

Ærø Rum is distilled by Ærø Whisky Distillery on the small southern Funen island, where everything from the start has been about using local products and preserving the island's historic buildings. That gives the rum a clear local grounding, making it a great choice for tasting Danish island craft in its most authentic form.

History & Background

In 2013, Michael Nielsen began developing his dream of making alcohol on Ærø, based on local ingredients from the island. In 2016 the distillery was built in the wash house in the backyard of an old merchant's courtyard in Ærøskøbing, a renovation that later won the "Renovation Special Prize" for its respectful approach to the historic 1800s building. In 2019 a brewery was also established directly opposite the distillery, bringing the whole production together in one place.

Production & Style

The rum is distilled from molasses or cane products and aged in casks in the Danish climate, giving a different, slower maturation than rum typically undergoes in the tropics.
