    In the back building of the Handelsgården merchant's house in Ærøskøbing, a rum is brewed that isn't trying to be Caribbean – it's Danish from start to finish.

    Ærø Danish Solera Rum is a Solera Rum distilled and matured on Ærø and bottled at 48%.

    The rum comes from Ærø Whisky, a small micro-distillery in the heritage-listed wash house behind the Handelsgården merchant's house in Ærøskøbing, founded by ship's captain Michael Nielsen in 2016. The rum is made from sugarcane molasses and matured in a Solera system, a method known from the sherry industry, where young rum is added at the top of the casks while older, more mature rum is drawn from the bottom. The casks previously held Oloroso and PX sherry from Spain, and only around 300 bottles of Solera Rum are bottled each year.
