    At 69 degrees north the Lyngen Alps throw their shadow over a distillery that has grown used to working in the dark. In winter the northern lights stand above the roof for hours. Bivrost takes its name from that very bridge, the one that in Norse mythology connects the world of men with the world of the gods.

    Expert description

    Bivrost Norsk Arctic Vodka is a Norwegian Vodka from Aurora Spirit Distillery, distilled from Arctic barley and bottled at 40%.

    Aurora Spirit Distillery sits in Lyngen in northern Norway, well above the Arctic Circle, and calls itself the world's northernmost distillery. The water comes from the glaciers of the Lyngen Alps: meltwater from ice that froze more than 5,000 years ago and has lain untouched in the mountain ever since. It is filtered, and otherwise handled as little as possible.

    Distillation runs through the full column, 15 plates and a five metre tower, where the spirit is cleaned again and again before it is cut with the glacier water. The result is a vodka without sharp edges, but it has not been polished into nothing. A soft grain character from the barley remains, the kind most heavily distilled vodkas strip away completely.

    Tasting notes

    Nose

    Clean and cool. A lightly sweet grain note, a suggestion of vanilla and something mineral, close to wet stone.

    Palate

    Soft and almost oily in the mouth. The barley shows up as a mild sweetness, followed by a touch of white pepper.

    Finish

    Short and clean. The sweetness drops away quickly and leaves a cool, mineral impression behind.

    Bivrost Pink Gin is a Norwegian gin infused with pink botanicals such as pink pepper and grapefruit and bottled at 44%.

    The gin comes from Aurora Spirit Distillery, located at Lyngen Resort in Northern Norway, marketed under the Bivrost name. The distillery purifies meltwater from the surrounding glaciers and combines it with botanicals harvested locally in the Arctic landscape.

    The juniper base is joined by pink pepper, grapefruit and a blend of Arctic berries, which give the gin its pink colour and fruity character.

About Bivrost

Bivrost is the whisky from Norway's Aurora Spirit Distillery, located so close to the Arctic Circle that you can watch the Northern Lights dance over the distillery buildings once darkness falls in winter. The name Bivrost refers to the blazing rainbow bridge from Norse mythology connecting the world of the gods to that of humans – a fitting reference for a whisky literally distilled beneath the aurora. For collectors, the extremely limited quantities the distillery releases are part of the appeal, while beginners encounter a whisky shaped by one of the world's most extreme climates.

History & background

Aurora Spirit Distillery sits in Northern Norway, where the midnight sun in summer and the polar night in winter take turns dominating the sky – right at the Arctic Circle, both phenomena are reduced to just half an hour a year. The distillery is one of a handful of Northern Norwegian producers to take on whisky production in a climate no Scottish distiller would recognise, and the extremely limited quantities of whisky released make every bottling a rarity once it finally reaches the market.

Production & style

The Arctic climate, with long, cold winters and short, intense summers, affects maturation in ways markedly different from both Scotland and warmer whisky nations. The distillery also works with vodka, gin, snaps and aquavit under the same Aurora Spirit roof, reflecting a production as experimental as its location is extreme.
