    Deep in the rainforest of Mindanao, where the air hangs thick with cane and wet earth, a distillery most people have never heard of has just bottled its very first release. Rainforest 2024 is that first attempt, aged where it grew.

    Rainforest 2024 Philippines Pure Single Rum is a Philippines Pure Single Rum matured in ex-Chardonnay casks and bottled at 58%.

    The rum comes from Rainforest Distillers, founded in 2015 by master distiller Marc Schulze in Bukidnon on the island of Mindanao in the southern Philippines. Schulze is also behind Kasa Kaña Rum Agrikultura, and Rainforest 2024 marks the distillery's first bottling in the Habitation Velier range – a genuine world première for a country that barely registers on the rum map yet.

    The rum is distilled from the local heirloom cane variety Manpu and fermented for 9 to 11 days with dunder and muck that has itself rested in the tropical Bukidnon biome. After pot still distillation – which earns the rum its Pure Single Rum status under the Gargano Classification – it spent 20 months in ex-Chardonnay casks maturing inside the rainforest itself. The tropical heat and humidity push the Angels' share above 10% a year. No sugar is added, and the rum is bottled at cask strength.

    Tasting Notes

    Nose

    Fresh cane juice meets pineapple, lime and coconut milk, with vanilla and a whisper of camphor emerging as it opens, alongside something close to freshly cut sugarcane.

    Palate

    Clean and lively, with a medicinal edge, liquorice and a faintly oily texture that carries the cane character all the way through.

    Finish

    Long, dry and citrus-fresh, with traces of pear and pineapple, dressed in floral and herbal notes reminiscent of a lime and basil tart.

    Some bottles are finished when the calendar says so. Others get to wait. Foursquare 2013 is one that waited — ten years longer than anyone expected, in the Barbados heat, where more than half of what went into the cask has long since evaporated up through the wood and out into the tropical air.

    Foursquare 2013 12 Year is a Barbados Pure Single Rum, distilled 100% in a pot still and bottled at 60%. The story starts in 2015, when Habitation Velier and Foursquare's distiller Richard Seale released the very first Foursquare Pure Single Rum onto the market — just two years old at the time. This bottle is the same project, ten tropical years later. Instead of dumping the casks in 2015, they were left to keep resting, and the result is a rum that has lost more than 60% of its volume to the angels along the way. It is a radically different story from the young 2015 release — more wood, more time, more concentration.

    The rum was distilled on Foursquare's double retort pot still, built by Green Engineering and Forsyths, and has spent its entire life in 370-litre ex-cognac casks in Barbados' tropical climate. That is the same philosophy that makes Habitation Velier one of the most respected names in rum: no sugar, no colouring, no dilution. Just time, wood, and an island climate that works faster than any European warehouse ever could.

    Tasting Notes

    Nose

    The aroma is complex and a little wild at the edges — ripe tropical fruit mingles with spice and a touch of something medicinal, almost camphor-like. Underneath sits a deep, woody scent from the cognac casks, along with a faint lactic freshness that keeps the whole thing from turning heavy.

    Palate

    On the palate it is intense and spicy, with traces of flowers and a warm, woody core. The cognac casks have given it a slightly tart edge that plays against the fruit.

    Finish

    Long and woody, where the medicinal and spicy notes linger, and that same lactic freshness reappears right at the very end.

Albert Heinrich Riise had no way of knowing his name would travel the world for more than 150 years. XO Tribute Reserve gathers that whole story into one glass.

    Old St. Croix XO Tribute Reserve is a Rum Based Spirit, finished in Pedro Ximénez and Oloroso sherry casks and bottled at 43.8%.

    It carries an old name with new pride. Old St. Croix was the trademark Riise already used back in the 1870s, when he began selling his West Indian rum to the United States and Central America – named after the island of St. Croix, once known as the "Garden of the West Indies" for its lush sugar cane cultivation. In June 2025, the name officially returned after decades under the A.H. Riise banner, and Tribute Reserve is one of the first bottles to carry it again.

    Tribute Reserve sits at the very top of the XO Reserve range. Here, the Master Blender works exclusively with casks from the oldest, best-preserved reserve stock – distillates sourced from Central America and the West Indies, finished in Pedro Ximénez and Oloroso sherry casks. The result is a deeper, more balsamic character than the rest of the XO range, with a slightly elevated strength that adds weight to the palate without ever turning sharp.

    The bottle is a Limited Edition, with only 2,000 produced in total – each one individually numbered on the label.

    Tasting Notes

    Nose

    The nose opens with dark chocolate and bergamot, with a discreet hint of tobacco hiding underneath – almost like dusty wood in an old warehouse.

    Palate

    On the palate it is surprisingly light and fruity, with a touch of peppermint playing against the same bergamot from the nose.

    Finish

    The finish is dominated by peppermint and milk chocolate, while the tobacco returns once more – very discreet, more an afterthought than a statement.

    Fjord Rom 8 Years is a Danish Molasses Rum, distilled in 2018 and bottled eight years later in 2026 at Brænderiet Enghaven, at 48% ABV.

    The rum is the third bottle in the Fjord series, an exclusive trio created for Whisky.dk as a tribute to the small ferry Ragna and the route between Mellerup and Voer on the north side of Randers Fjord. Enghaven was founded in 2007 by Esben Moestrup, Erik Moestrup and Mikkel Nordkvist on the family farm the Moestrup family has run since 1881, and since then the range has grown from fruit brandy to also include rum, gin, vodka and whisky. Fjord Rom is built on molasses and has been given eight years to find its depth and warmth. Only 19 bottles of this batch were filled.

    The rum has aged for 14 tropical years in Panama. The first 12 years were spent on ex-bourbon casks before it was moved to an ex-Speyside Scotch Whisky barrel for the final 2 years. The Speyside casks add a softer, more fruit-sweet character than the peated Islay casks, giving this release a markedly different profile from its sister bottle, Peated Finish. The bottle comes from cask number SS2211, undiluted and unfiltered.

    Speyside is known as Scotland's most productive whisky region, with a generally lighter, more fruity style ideal than Islay's peated whisky - a contrast that comes through clearly in this rum.

    Dead Reckoning South Pacific is a Single Blended Rum from the South Pacific, 10 years old, aged on 40-year-old Muscat casks, bottled at 47%.

    The rum was distilled in the South Pacific in 1994 on a John Dore pot still with a double-retort configuration, also known as a "double thumper". The blend consists of 80% continuous-still rum and 20% pot-still rum, creating a complex base. This base was then aged on 40-year-old Muscat casks, supplied by Charles Sturt Winery in Wagga Wagga, New South Wales - casks that add a sweet, wine-toned character to the powerful rum. The release was bottled in 2022 and is limited to 1,240 bottles.

    The combination of South Pacific distillation and Australian Muscat cask ageing makes this bottle an unusual crossover of two spirits traditions.
