Under a bridge in Waco, Texas, sat a disused welding shop where an entirely new chapter of American whiskey history began in 2009. Balcones became the state's first distillery since Prohibition, and it did so with a sharp break from tradition: blue corn instead of wheat, unfamiliar barrel types, and a stubborn will to do things differently. Just six years later, in 2015, the company moved into a significantly larger facility, allowing production to increase to around 350,000 liters of whisky a year. The young distillery quickly forged its own identity by using blue corn instead of the wheat typically found in American whiskey, and won a long string of awards for its Texas Single Malt and Texas Rye releases. At its 10th anniversary in 2018, Balcones was featured in Forbes as one of the most notable new names in American whiskey.
