Among them is the Blue Agave (Agave Tequiliana Weber), which is the type that must be used for the production of tequila according to the restrictions, the so-called Denomination de Origin. About Ilegal Mezcal

Ilegal has become one of the most recognisable mezcal brands outside Mexico, largely thanks to the story behind its name. It is made exclusively from Espadín agave, roasted in earthen pits for that signature smoke, and every bottle is hand-numbered. Collectors tend to chase the Añejo bottling, while the Joven is an easy entry point for newcomers to the category.

History & Background

The story begins in Guatemala, where American John Rexer ran a bar and smuggled homemade mezcal across the border from Oaxaca because his guests couldn't get enough of it. What started as an illegal hobby turned into a real business in the 2000s, and the name Ilegal followed naturally as a wink to its past. Since then, the brand has grown into a fixture on mezcal shelves worldwide without losing its ties to the small Oaxacan producers who still make it the traditional way.

Production & Style

The agave hearts are roasted in stone-lined earthen pits, giving the mezcal its earthy smoke, before being crushed and fermented with wild yeast. There are three expressions: Joven, unaged and clear; Reposado, rested 4 months in American oak; and Añejo, aged 13 months across American, French and ex-bourbon casks.

Ilegal shows a clear smoky character from the pit-roasting, backed by a mineral, earthy base, while the aged expressions add caramelised pear, bitter orange and vanilla on the finish.
