Ilegal Mezcal

Ilegal Mezcal wears its outlaw name with pride, a nod to the years when the spirit could only cross the border in secret. Today it is as legal as it is delicious, handmade in Oaxaca from agave, sun and time, with no shortcuts.

In earthen pits high in the Oaxacan hills, agave hearts are roasted for up to a week before being crushed under a horse-drawn millstone. Ilegal Joven Mezcal carries that process into every glass – smoke, earth and sweetness, unaged and unfiltered.

    Expert Description

Ilegal Joven Mezcal is a Mexican Joven Mezcal made from 100% Espadín agave and bottled at 40% alcohol. It is produced in Oaxaca by fourth-generation mezcaleros from the Hernández family, who harvest the agave by hand with machetes before roasting it in earthen pits lined with river stones for five to seven days over Encino oak fires. The agave is then crushed with a horse-drawn tahona, fermented naturally in pine vats, and distilled twice in copper stills.

Ilegal was founded in 2006 by American John Rexer, who originally brought unbranded mezcal from Oaxaca to his bar, Café No Sé, in Antigua, Guatemala – hence the name Ilegal, a nod to the early, unofficial trips across the border. Today the brand is one of the world's best-known mezcal names, though production still follows the same handcrafted methods.

About Ilegal Mezcal

Ilegal has become one of the most recognisable mezcal brands outside Mexico, largely thanks to the story behind its name. It is made exclusively from Espadín agave, roasted in earthen pits for that signature smoke, and every bottle is hand-numbered. Collectors tend to chase the Añejo bottling, while the Joven is an easy entry point for newcomers to the category.

History & Background

The story begins in Guatemala, where American John Rexer ran a bar and smuggled homemade mezcal across the border from Oaxaca because his guests couldn't get enough of it. What started as an illegal hobby turned into a real business in the 2000s, and the name Ilegal followed naturally as a wink to its past. Since then, the brand has grown into a fixture on mezcal shelves worldwide without losing its ties to the small Oaxacan producers who still make it the traditional way.

Production & Style

The agave hearts are roasted in stone-lined earthen pits, giving the mezcal its earthy smoke, before being crushed and fermented with wild yeast. There are three expressions: Joven, unaged and clear; Reposado, rested 4 months in American oak; and Añejo, aged 13 months across American, French and ex-bourbon casks.

Signature Style

Smoky, Earthy, Complex
Ilegal shows a clear smoky character from the pit-roasting, backed by a mineral, earthy base, while the aged expressions add caramelised pear, bitter orange and vanilla on the finish.

The name Ilegal isn't a marketing gimmick — for years it was literally illegal to carry the homemade mezcal John Rexer served in his bar across the border into Guatemala.
