Aqua Vitae Sydfyn Snaps

Lene True and Karsten Kjer Michaelsen settled in Skårup on southern Funen in 2005 and became Denmark's first distillery to specialise in eau-de-vie fruit brandy. They regard their aquavits and brandies as a food product rather than just spirits, a philosophy that has earned them both the Ecological Society's award and the Food Prize. This is Danish craftsmanship that insists on quality over volume.

  • Bottle of Aqua Vitae Sydfyn cherry ratafia with red label
    Item no.: 22227222554-33370

Late summer on the island of Sydfyn smells of ripe cherries and warm afternoon sun over the village of Skårup. On a small farm there, Lene True and Karsten Kjer Michaelsen pick the fruit by hand and turn it into something sweeter and more thoughtful than an ordinary schnapps.

    The Expert's Description

Aqua Vitae Sydfyn Sydfynske Kirsebær Ratafia is a Danish cherry ratafia bottled at 35% ABV from the Sydfyn-based distillery Aqua Vitae Sydfyn.

The distillery was founded in 2005 by Lene True and Karsten Kjer Michaelsen as the first in Denmark to specialise in fruit brandy made in the French eau-de-vie style. The couple handles every step themselves, from picking the fruit to bottling the finished spirit, distilling on hand-built copper and stainless steel equipment sourced from Germany's Schwarzwald region.

Ratafia is an old French technique in which fermentation of fresh fruit juice is halted by adding spirit. The method preserves the fruit's natural sweetness instead of letting it convert into alcohol during fermentation, giving a spirit that tastes more distinctly of the fruit itself than a traditional brandy does. Here, it's Sydfyn cherries that take the lead.

    Tasting Notes

    Nose

Ripe, dark cherries with a trace of almond kernel and a touch of fresh fruit acidity.

    Palate

Full cherry sweetness meets a lightly bitter stone-fruit note, carried on a soft, warm spirit base.

    Finish

Medium in length, with the faint bitterness of cherry stone lingering last.

    Did You Know?

The word ratafia comes from an old French custom of sealing a deal or friendship with a glass of the sweet fruit spirit, hence the phrase "rata fiat", meaning the agreement is confirmed.

  • Bottle of Aqua Vitae Sydfyn Cider K with plain yellow label
    Item no.: 22227222554-33371

On Sydfyn, apple trees hang heavy in autumn, and some of that fruit doesn't end up as juice but as cider, later distilled into something stronger and more concentrated. Sydfynske Cider K is the distilled expression of that local apple tradition.

    The Expert's Description

Aqua Vitae Sydfyn Sydfynske Cider K is a Danish cider brandy bottled at 40% ABV from the Sydfyn-based distillery Aqua Vitae Sydfyn.

The distillery in Skårup is run by Lene True and Karsten Kjer Michaelsen, who since 2005 have specialised in fruit brandy made in the French eau-de-vie tradition. The couple handles all the fruit themselves, from picking to the finished bottle leaving the farm, distilling on hand-built copper and stainless steel equipment from Germany's Schwarzwald region.

The name K recurs across several of the distillery's apple-based spirits and points back to the tradition of distilling Sydfyn cider into a clear, powerful spirit. Where an ordinary cider is light and sparkling, the distilled essence becomes a dry, apple-driven brandy with far more body and strength.

    Tasting Notes

    Nose

Ripe apples with a trace of fermented cider, backed by a light, dry peel note.

    Palate

Dry, clean apple character with a firm, warming spirit structure and a hint of apple skin.

    Finish

Medium in length and dry, with the apple fading into a lightly tart close.

About Aqua Vitae Sydfyn

Aqua Vitae Sydfyn was founded in 2005 and, as the first distillery in Denmark, specialised in producing fruit brandy with a focus on the eau-de-vie style. Behind the distillery in Skårup on southern Funen are Lene True and Karsten Kjer Michaelsen, who craft spirits with top-class flavours and aromas. For the newcomer it's an aromatic, fruit-driven entry into Danish aquavit; for the connoisseur, the house is interesting because it considers its products a food item rather than just spirits, a philosophy that has earned them several food awards, including the Salling & Jyllands-Posten Food Prize in 2014.

History & background

Aqua Vitae Sydfyn was founded in 2005 by Lene True and Karsten Kjer Michaelsen as the first Danish distillery specialising in eau-de-vie style fruit brandy. From the outset, the couple insisted on treating their products as a food item on par with fine gastronomy, which among other things led to first prize at the Organic Denmark food competition in 2009. In 2014, the aperitif Pomó further cemented the house's position when it won the Salling & Jyllands-Posten Food Prize, an accolade that firmly placed the small southern Funen distillery on the Danish gastronomic map.

Production & style

The aquavit is distilled from grain and spiced with local herbs such as caraway and dill, following classic Danish aquavit tradition.
