The Expert's Description
Aqua Vitae Sydfyn Sydfynske Cider K is a Danish cider brandy bottled at 40% ABV from the Sydfyn-based distillery Aqua Vitae Sydfyn.
The distillery in Skårup is run by Lene True and Karsten Kjer Michaelsen, who since 2005 have specialised in fruit brandy made in the French eau-de-vie tradition. The couple handles all the fruit themselves, from picking to the finished bottle leaving the farm, distilling on hand-built copper and stainless steel equipment from Germany's Schwarzwald region.
The name K recurs across several of the distillery's apple-based spirits and points back to the tradition of distilling Sydfyn cider into a clear, powerful spirit. Where an ordinary cider is light and sparkling, the distilled essence becomes a dry, apple-driven brandy with far more body and strength.
Tasting Notes
Nose
Ripe apples with a trace of fermented cider, backed by a light, dry peel note.
Palate
Dry, clean apple character with a firm, warming spirit structure and a hint of apple skin.
Finish
Medium in length and dry, with the apple fading into a lightly tart close.
