About Choya Liqueur

Choya is Japan's pioneer in umeshu - the traditional Japanese plum liqueur, where unripe ume plums are steeped in sugar and shochu until the fruit's natural aroma and acidity have infused the spirit. The result is a sweet-tart, complex liqueur balancing fruitiness and depth, often served on the rocks, with soda, or in cocktails.

History & Background

Choya was founded by the Kondo family in 1914 and started out as a vineyard. It wasn't until 1959 that the company made the historic decision to begin producing umeshu, using the juicy, tart Nanko-ume plums from Wakayama Prefecture. That made Choya Japan's first commercial umeshu producer, turning a household tradition into a product now sold in more than 60 countries.

Production & Style

Unripe ume plums are steeped in sugar and shochu - a clear Japanese distilled spirit at around 35% ABV - in a slow infusion process that preserves the fruit's natural character while developing complex, sweet-tart notes.
