Choya Liqueur

Unripe ume plums steeped in sweetened shochu for months on end. Choya has been making Japanese plum liqueur since 1959 and is today the world's best-known name in umeshu.

  • Choya Dry Ume Wine bottle with Japanese ume fruit wine
    Item no.: 22227865479-1106-197279962

In Japan, many good meals don't start with wine from grapes, but with ume – a small, tart stone fruit related to plums and apricots. Choya Dry Ume Wine is the dry take on this tradition, made to accompany the food rather than overpower it.

    Expert's description

Choya Dry Ume Wine is a Japanese fruit wine from Choya, made from the ume fruit, at 10% alcohol.

Choya Umeshu Co. has specialised in ume-based drinks for decades and is today one of Japan's best-known producers of umeshu and ume wine. Where the classic Choya style is made by steeping the fruit in alcohol and sugar, the Dry version is instead fermented directly from ripe ume fruit, giving a drier, more restrained sweetness than the original.

    Taste

The taste is mild and fruity with a fine, balanced sweetness and a tart core from the ume fruit, reminiscent of a cross between plum and apricot.

    Item no.: 22227865479-1106-1972480

Red shiso and golden ume plums in harmony - Choya Extra Shiso is the more complex sibling to classic umeshu, spiced with Japan's most aromatic herb.

    Ekspertens beskrivelse

Choya Extra Shiso is a Japanese umeshu liqueur made from the ume fruit and flavoured with red shiso (perilla), bottled at 17% ABV.

The liqueur is produced by Choya Umeshu Co., Ltd. in Osaka, Japan, made exclusively from Nanko-ume from the Kishu region, aged 2 to 3 years. The addition of red shiso, an aromatic herb from the mint family, gives the liqueur a light tartness and spicy dimension that harmonises with the ume fruit's natural sweetness, while the shiso leaves also give the liqueur its characteristic, lightly reddish colour.

    Smag

The taste is sweet with a fine, balancing acidity, supported by intense stone fruit notes and a fresh, lightly bitter character from the shiso leaves, reminiscent of mint and aniseed. The aroma offers ripe plums, fine herbal spice and a hint of red berries.

Shiso, used in this liqueur, is an aromatic herb from the mint family that is as common in Japanese cooking as basil is in Italian - and here it gives the liqueur a unique, lightly minty undertone.

    Expert's Description

The Choya Royal Honey is a Japanese Umeshu based on ume fruit and honey, bottled at 17% ABV.

Umeshu is a Japanese fruit liqueur made from the ume fruit, which belongs to the same family as plums and apricots but has a considerably higher acid content. The flavour of a good umeshu comes not only from the fruit's flesh and skin, but also from the kernel. The Choya Royal Honey is made by producer Choya exclusively from Japanese ume fruit (the Kishu Nanko variety), natural honey and royal jelly, with no added sugar, using an average of 240 grams of ume fruit per bottle.

    Taste

The taste offers the delicate tartness of the ume fruit balanced by the natural sweetness of honey, giving a smooth, round umeshu without the sharp sugary sweetness found in many other plum liqueurs. The bottle is filled with a couple of whole ume fruits, which continue to lend character to the liqueur.

From the Wakayama region of Japan comes this fresh umeshu, where sun-ripened Japanese plums are left to steep for a full year.

    Expert description

The Choya Single Year is a Japanese Fruit liqueur based on Japanese ume plums, bottled at 15.5%.

The liqueur comes from Choya Umeshu Co., Ltd., which has been the pioneer of commercial umeshu production in Japan since 1959. Choya mainly uses Nanko-ume, a premium plum variety from the Kishu region in Wakayama prefecture, which is macerated in alcohol and sugar. The Single Year edition refers to the plums having steeped for exactly one year, giving a fresh, direct plum character compared to the house's longer-aged expressions.

    Taste

The nose is fresh with tangy plums and a light almond-like undertone from the stones. On the palate, The Choya Single Year is sweet and tangy with a clear plum character, while the finish is clean and refreshing.

About Choya Liqueur

Choya is Japan's pioneer in umeshu - the traditional Japanese plum liqueur, where unripe ume plums are steeped in sugar and shochu until the fruit's natural aroma and acidity have infused the spirit. The result is a sweet-tart, complex liqueur balancing fruitiness and depth, often served on the rocks, with soda, or in cocktails.

History & Background

Choya was founded by the Kondo family in 1914 and started out as a vineyard. It wasn't until 1959 that the company made the historic decision to begin producing umeshu, using the juicy, tart Nanko-ume plums from Wakayama Prefecture. That made Choya Japan's first commercial umeshu producer, turning a household tradition into a product now sold in more than 60 countries.

Production & Style

Unripe ume plums are steeped in sugar and shochu - a clear Japanese distilled spirit at around 35% ABV - in a slow infusion process that preserves the fruit's natural character while developing complex, sweet-tart notes.

Signature Style

Sweet-tart, Fruity, Plum-forward
The flavour offers ripe plum and a touch of almond, with a tart freshness that balances the liqueur's natural sweetness.
