History & Background

Paul Delane is a French house rooted in Burgundy's crémant tradition, where the production method follows the same core principle as Champagne – secondary fermentation in the bottle – but using grapes and terroir from Burgundy instead of Champagne. The Blanc de Noirs style, where dark-skinned grapes are pressed gently and quickly, is a specialty demanding great precision in the cellar to avoid picking up colour from the skins. Burgundy's crémant tradition dates back to the early 20th century, when local producers sought a more affordable alternative to the pricier Champagnes from the north.

Production & Style

The wine is made from regional grape varieties and undergoes a second fermentation in the bottle, following the classic champagne method.
