In modern times, Casa Noble was rebuilt around organic farming and a philosophy of letting nature set the pace rather than rushing the harvest. The house lets its agave mature up to twice as long as many competitors, requiring patience but yielding greater sweetness and complexity in the finished spirit.

Production & Style

The agave matures for up to ten years before harvest and is then distilled in small batches, giving the tequila a deeper, more complex character.
