  In 1796 the Spanish king banned the very recipe behind this Mexican rum because it had become so popular in Spain that it threatened domestic producers. The name Prohibido, "the forbidden one", is a tribute to that story.

  The rum is produced by Ron Prohibido S.A. de C.V. at Ex-Hacienda Corralejo in Guanajuato, Mexico, where it's aged in a 12-year solera system, a method where younger and older rum are continuously blended through a pyramid of casks so each bottle gains depth from several vintages at once. Some of the casks previously held wine, brandy and sherry, giving the rum its characteristic wine-like and nutty tones.

  The solera method means no bottle is ever fully drained of the oldest rum in the system, creating a smooth, complex flavour that builds up over time.

  Sweet with anise and rose, blended with apple, raisin and plum, plus dried fruit and a hint of chocolate.

  Palate

  Full-bodied with caramel, vanilla, dried fruit and plum, balanced by toasted nuts and coffee.

  Like its younger 12-year sibling, the rum comes from Ron Prohibido S.A. de C.V. at Ex-Hacienda Corralejo in Guanajuato, where it's aged in a solera system with casks that previously held wine, brandy and sherry. With three more years in the system, the 15-year expression pulls forward a deeper, more coffee- and chocolate-driven profile, where the wine-like sweetness of the younger expressions turns into something rounder and more dessert-like.

  The solera system means every bottle carries traces of the very oldest vintages that have ever entered the system, giving a smooth continuity across the house's different age expressions.

  The name refers to a 17th-century ban, when the Spanish king Felipe V tried to stop rum production in the Mexican colonies, a ban that never really succeeded.

  El Ron Prohibido Silver is a Mexico Rum, distilled in Penjamo and finished in used raisin wine casks, bottled at 40%.

  The rum is part of the range from the Mexican spirits producer also behind Tequila Corralejo, which here applies its experience with agave distillation to create a rum with a Mexican twist. The name El Ron Prohibido, "the forbidden rum", draws on the history of how Spain in the 1600s tried to restrict rum production in its American colonies in order to protect the trade in Spanish wine and brandy.

  The finishing in raisin wine casks lends the rum a light, sweet dried-fruit character that sets it apart from more traditional Caribbean styles.

  Six hours by car from Oaxaca City, high in a cloud-covered mountain forest, the sugar cane for Paranubes is grown without pesticides and carried out by burro. This is rum from a place most rum never comes close to.

  Expert Description

  Paranubes Oaxaca is a Mexican Rum distilled from fresh sugar cane juice and bottled at 54%.

  The rum is produced in the Sierra Mazateca mountains of northern Oaxaca by third-generation master distiller Jose Luis Carrera, who grows his own sugar cane without artificial fertiliser or pesticides. The juice is freshly pressed and wild fermented in pine vats before being distilled on a copper column still fired by spent cane fibre. The rum is distilled to proof, nothing added or removed.

  The style sits somewhere between the green, grassy character of rhum agricole and the more rustic, funky profile of cachaça, making Paranubes a rum that clearly tastes of its place of origin rather than following a fixed international template.

  Raw, fresh cane juice explodes out of the glass alongside mint and ripe apricot.
