Six hours by car from Oaxaca City, high in a cloud-covered mountain forest, the sugar cane for Paranubes is grown without pesticides and carried out by burro. This is rum from a place most rum never comes close to.

Paranubes Oaxaca is a Mexican Rum distilled from fresh sugar cane juice and bottled at 54%.
The rum is produced in the Sierra Mazateca mountains of northern Oaxaca by third-generation master distiller Jose Luis Carrera, who grows his own sugar cane without artificial fertiliser or pesticides. The juice is freshly pressed and wild fermented in pine vats before being distilled on a copper column still fired by spent cane fibre. The rum is distilled to proof, nothing added or removed.
The style sits somewhere between the green, grassy character of rhum agricole and the more rustic, funky profile of cachaça, making Paranubes a rum that clearly tastes of its place of origin rather than following a fixed international template.
Tasting Notes
Nose
Raw, fresh cane juice explodes out of the glass alongside mint and ripe apricot.
Palate
Silky and sweet with fresh cane juice, green olive and wild herbs, complemented by freshly baked cornbread and dried figs.
Finish
Fruity with banana and pineapple, where a hint of chili appears when paired with lime.
