HMS Formidable rum matured .Exclusively for Denmark

Since 1972, when Santa Lucia Island's only two distilleries joined forces to create Santa Lucia Distillers, they have gone from stereotypical mass production to producing some of the world's best rums. The distillery, located in the Roseau Valley on the island, makes everything from Superpremium rums to rum-based cream liqueurs. So successful that when Santa Lucia Distillers counted up in the summer of 2013, it had received no less than 209 international medals for their outstanding rums. This includes being named the world's best rum distillery, winning four rum trophies, five double golds and 79 gold medals.

Historically, the European demand for sugar left the locals of Santa Lucia with the by-product molasses from which they produced rum in the 17th and 18th centuries. At first, the rum was mostly drunk by slaves and sailors, with sailors entitled to a daily ration. But soon rum became more profitable than sugar production...

Since sugar production on Santa Lucia stopped in 1962, molasses has been imported, mainly from Guyana. Recently, however, 5 hectares of sugar cane have been planted and more will follow.

The rum is basically produced by adding hot water to the molasses. The molasses is poured into steel tanks where yeast is added and the sugar is converted into alcohol. Fermentation lasts between 24 and 30 hours at Santa Lucia. The liquid is then distilled in four different kettles - three pot stills and one column still. Depending on which kettles are used, the profile of the rum changes. Santa Lucia ages the distillery's rum in American white oak barrels, which were previously used to age American whiskey. The barrels are 200 liters. In smaller quantities - for the exclusive rums - port, wine, sherry, madeira and Sauternes casks are also used.

When aging spirits in the tropics, the maturation of the spirit is accelerated by something like 2 ½ times compared to Europe, due to the higher temperature and humidity. This means that rums over 10 years old often become very woody and tannic. At Santa Lucia, they almost always blend old barrels with newer barrels to achieve a nice balance in the blend - and that's why they don't write the age on the rum...
Santa Lucia rum is as pure as almost possible. Apart from a little caramel for color, nothing else is added. No sugar, likør, brandy, sherry or any other piggishness.
