This Thy Whisky No 17 has been named STOVT - an organic Danish Single Malt Whisky at 51,2% Stovt is a very special whisky for Thy Whisky. It is blended from a selection of their single malt whisky barrels. Both bourbon and oloroso sherry casks, with and without smoke, with light and slightly burnt malt types and from different vintages.

Finally, it has been given a short finish in stout casks that have aged Limfjordsporter (their favorite stout) at Thisted Bryghus. This is the third time they have bottled a "Stovt". This time they have turned up the beechwood smoke a bit and the bourbon barrels have a larger part of the credit for the cask character. The whisky is composed of barrels that are 3-6 years old. The result is a lightly smoky whisky with a complex sweetness with notes of bourbon vanilla, fruit, soft toffee, burnt caramel and a hint of sweet licorice. It is an incredibly flavorful and balanced whisky with a long pleasant finish. Only 2097 bottles have been produced Thy Whisky No 17 STOVT

And chasing new flavor notes by working with old and new grains in their malting process. After the warm reception of their first whiskies, Thy Whisky has spent the last 2-3 years dedicated to adding more barrels to the warehouse and taking more and more of the production into their own hands. After six months of construction and installation, they are now close to reaching the next big milestone. They have officially opened their Gårdmalteri - which will be the first of its kind in Denmark. It will supply Thy Whisky as well as other microbreweries and distilleries across the country with organic malt.
