Pommard is made from Pinot Noir from vines that are around 55 years old, grown in clay and limestone soil. After manual harvesting, the grapes undergo a cold pre-fermentation in vats. Fermentation takes place in tanks, with regular manual punching down and pump-overs.

The wine is aged for 12 months in oak barrels and then for 5 months in stainless steel tanks.

About Domaine Aurore Bachelet

Domaine Aurore Bachelet is located in Santenay, south of Côte de Beaune, and is run by Aurore Bachelet, who returned to her family's Burgundy roots after training in viticulture and oenology.
