Lustau San Emilio is a Pedro Ximenez Sherry from Jerez, Spain, made from the Pedro Ximenez grape with an alcohol content of 17%. Like the house's other PX sherries, the grapes are sun-dried before pressing and fermentation, concentrating the sugar content to a level that makes the wine almost syrupy. San Emilio is aged at Bodegas Lustau using the solera system, developing a deep, dark colour and an intense dried fruit aroma during ageing, making it one of the house's most dessert-like sherries.
