Ximénez-Spínola Cosecha Vintage 2019 is a Spanish Fortified Wine made exclusively from Pedro Ximénez grapes with an alcohol content of 13%. Unlike many sherries, which are blended through the solera system of vintages, a cosecha wine comes from a single harvest - here 2019 - giving a more direct expression of that particular vintage's weather conditions and grape ripeness. The Ximénez-Spínola bodega, founded in 1729, sun-dries its grapes for at least 21 days before pressing, which significantly concentrates the sugar.
