A young brand built on an old name: Arnaldo Strucchi, the man who wrote the book in 1907 on what real Vermouth di Torino should be. The result is a vermouth of herbs, bitterness and a wink at old Art Deco glamour.

    The sun sits high over Piedmont's citrus groves, and the air hangs thick with grapefruit, wild fennel and a whisper of hops drifting in from the fields outside Turin. Strucchi Bitter Bianco is the house's pale sibling – straw-yellow, bright, and just as at home in a morning aperitivo as in the last drink of the night.

    Strucchi Bitter Bianco is an Italian Bitter from Piedmont, made with 15 botanicals and bottled at 27%. It's the newest addition to the Strucchi family – the paler sibling to the deeper Bitter Rosso, but built on an entirely different axis: citrus, florals and a lightness that makes it just as fitting for brunch as for the first drink of the evening.

    The Strucchi name goes back to Arnaldo Strucchi, a Piedmontese oenologist who wrote the book on how a proper Vermouth di Torino should be made, back in 1907. These days it's gin-maker Paolo Dalla Mora running the show – he revived Strucchi's name and built a whole range around his work: three vermouths, the red Bitter Rosso, and now this, the palest of them all.

    Bitter Bianco is built around 15 botanicals, among them hops, grapefruit, mandarin, wild fennel, bitter orange, cardamom, liquorice, gentian, clary sage and galangal. The result is straw-yellow and almost transparent, with a bitterness that leans toward citrus and florals rather than the heavier, darker style found in Campari and other red bitters.

    Like the rest of the range, the bottle carries a label drawn by illustrator Riccardo Guasco, who has given every bottle in the Strucchi family its own Art Deco figure pulled from the early 1900s.

    Nose

    The nose brings grapefruit and mandarin, with hints of wild fennel and herbs that give it a fresh, almost green edge.

    Palate

    On the palate, bitter orange and hops meet warm touches of cardamom and liquorice, without ever turning heavy.

    Turin at dusk smells of bitter orange, gentian and the endless aperitivo hour along the cafés of Via Po. Strucchi Bitter Rosso comes straight out of that scene. The bottle carries the name of an oenologist who wrote the book on vermouth in 1907 – and never knew what he'd set in motion.

    Strucchi Bitter Rosso is an Italian Bitter from Piedmont, bottled at 27% and built around nine botanicals. It was created as the natural partner to Strucchi Vermouth Rosso, so the two can meet in a Milano-Torino, though it holds its own just as well over ice or in a Negroni.

    The name comes from Arnaldo Strucchi, a Piedmontese oenologist who published Il Vermouth di Torino in 1907 and helped set the standard for how a proper Vermouth di Torino should be made. More than a hundred years later, entrepreneur Paolo Dalla Mora dug the story back up and built a whole range around it – three vermouths and this bitter, all rooted firmly in early-1900s Turin aperitivo culture.

    The botanicals list includes juniper and gentian among others, and that combination gives the bitter its spiced backbone. Rhubarb root and cinchona bark add the depth, while wormwood and bitter orange keep it firmly on the herbal track from nose to palate.

    The label draws on the same history. Illustrator Riccardo Guasco drew the whole Strucchi range as Art Deco figures reinterpreting icons of the 1920s – Greta Garbo on the Bianco, Mata Hari on the Rosso vermouth, Josephine Baker on the Dry. Bitter Rosso got Rodolfo Valentino, the actor who defined the leading man of silent film.

    Tasting Notes

    Nose

    Intense and a little sharp at first – wormwood and bitter orange peel push forward, before a light sweetness from rhubarb root shows up behind them.

    Palate

    Rhubarb root, gentian and cinchona bark take over on the palate, and the bitterness is pronounced but never harsh. There's a full, almost syrupy body that keeps the whole thing from turning too dry.

    Finish

    The finish stretches out long, herbal and dry, with a late touch of aloe and germander.

    Strucchi Vermouth & Bitter Miniature Set is a collection of four 5 cl bottles from the Italian house Strucchi in Piedmont, made up of three styles of Vermouth di Torino and one Bitter Rosso, with an alcohol content ranging from 16% to 27%.

    The name is a tribute to Arnaldo Strucchi, an Italian oenologist who published the monograph Il Vermouth di Torino in 1907. The book laid out how vermouth should be made to achieve a high and consistent quality, and its principles still underpin today's rules for the Consorzio del Vermouth di Torino. The modern Strucchi has taken both its name and its philosophy from him, and it still makes its range in Barbaresco, one of Piedmont's best-known wine villages.

    All three vermouth are made from Italian white wine, aromatized with herbs and spices and fortified with alcohol. Bianco is light and floral with citrus and a mild bitterness underneath. Rosso is fuller, with orange peel and spice and a lingering, bittersweet finish. Dry is crisp and dry with a hint of ginger. Bitter Rosso stands apart, built on nine different botanicals including juniper and gentian, with a deeper, more complex character of rhubarb root, cinchona bark and a long finish.

    Finish

    The vermouth all close with a mild, dry bitterness, most pronounced in Rosso. Bitter Rosso lingers the longest, leaving a warm, herbal finish built to stand up to ice and tonic.

    The vermouth are best served cool, around 10-12 degrees, in a small aperitivo glass or a white wine glass. Bitter Rosso can be served the same way over ice or used straight in cocktails. The modern Strucchi range was created by Paolo Dalla Mora and is produced in Barbaresco on the same principles: a white wine base aromatised with wormwood, spices, herbs and bark. In the Rosso, cinnamon and clove bring the spice forward, orange peel adds freshness, while marjoram, savory and sage contribute green, herbal tones. China bark – the bitter bark of the cinchona tree – gives the drink its long, dry finish and makes it just as suited to sipping neat as to standing behind the bar.

Behind the bottle is Vermouth Strucchi Srl, a contemporary brand paying tribute to the oenologist Arnaldo Strucchi, who in 1907 wrote the book "Il Vermouth di Torino" and thereby laid the foundation for the rules that today define the Vermouth di Torino designation.

    The vermouth is made using the classic method, where the white wine is aromatized with a bouquet of botanicals: wormwood, gentian, quassia and rhubarb form the bitter backbone, while marjoram, thyme, sage and rosemary sit as a spiced layer on top. The base wine comes from Italy and first goes through a maceration, where herbs release their aroma into an alcohol-based solution. It's a project built on one clear idea: bring back the original Turin style, the way it tasted before vermouth turned into a supermarket bargain. Behind the brand is Italian entrepreneur Paolo Dalla Mora, who previously built the gin brand Engine and sold it to Illva Saronno — before turning to something he calls far steadier than any gin trend will ever be. The name Strucchi borrows from Arnaldo Strucchi (1853-1913), an Italian oenologist whose book "Il Vermouth di Torino", published in 1907, became something of a founding text for the city's vermouth tradition. More than a century later, Paolo Dalla Mora picked up the name as the starting point for a brand-new label, launched in 2023 from Barbaresco in Piedmont. Dalla Mora already had form — he'd worked at companies including Ferrero and McDonald's before launching the gin brand Engine in 2019 and later selling it on. With Strucchi, he shifted focus from a trend-driven category to a classic he believes never really goes out of style.
