Ximénez-Spínola Fermentación Lenta Vintage 2021 is a White Wine from Jerez, Spain, with an alcohol content of 14%. The house is today run by the ninth generation, José Antonio Zarzana, and is unique in the region for growing only the Pedro Ximénez grape. Fermentación Lenta is a dry wine, made from overripe grapes given 21 extra days on the vine and then slowly fermented over more than 15 days in French oak barrels, with fresh must added daily to keep fermentation going. Because the wine has an alcohol content below 15% and is not fortified, it cannot carry the Sherry DO designation, but instead carries the house's own approved designation, Denominación Varietal Pedro Ximénez. 3,275 bottles of this edition were produced.
Tasting Notes
Nose
Raisin, dried figs and a hint of oak on the nose.
Palate
Complex and dry on the palate despite the intense grape character, with good structure from the oak ageing.
Finish
The finish is long with a hint of spice.
Serving & Food Pairing
Serve at 12-14°C in a white wine glass. Pairs well with mature cheeses, foie gras or enjoyed on its own as an afternoon wine.
