For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising. This is whisky where the distillery's soul is never drowned in colouring or filtration, and where every cask tells its own story.

    Blair Athol 2011/2023 Signatory Vintage 11 Years is a Single Highland Malt Scotch Whisky from four Dechar/Rechar Hogsheads, bottled at 46% without chill filtration and without added colour.

    The whisky was distilled on 30 September 2011 and bottled in January 2023. Casks #306899, #306905, #306911 and #306913 all went through the same treatment, where the innermost layer of wood is planed away and the cask charred anew. The method recharges a used cask and returns vanilla, caramel and pale spice.

    Blair Athol's spirit is heavy and malty, and the re-charred casks add sweetness without laying sherry or wine over it. The result is a clean reading of the distillery's own style.

    Nose

    Vanilla and baked apple with malted grain, cinnamon and a lightly toasted note.

    Palate

    Malt and caramel with pale oak, honey and a stroke of white pepper. The texture is full for 46%.

    Finish

    Medium and dry with grain, vanilla and a toasted oak note.

    Ruby port is the youngest and most fruit-driven of the ports, and a cask that has held it gives colour straight away. Here it has spent thirteen years with a Highland spirit built to take it.

    Blair Athol 2011/2025 Signatory Vintage 13 Years is a Highland Single Malt Scotch Whisky from a First Fill Ruby Port Hogshead, bottled at cask strength, 57.7%, without chill filtration and without added colour.

    The release belongs to Signatory Vintage's Cask Strength Collection and comes from a single cask. First fill port casks are forceful and give colour, acidity and dark fruit, which can overwhelm a light spirit — but Blair Athol's heavy, malty style has the weight to stand its ground.

    Full maturation in a port cask combined with a high bottling strength gives a whisky with clear vinous character and a velvet texture, where sweetness and spice pull in opposite directions.

    Nose

    Black cherries and fruit preserve with hazelnut caramel and a hint of ginger.

    Palate

    Full and sweet with port-soaked sponge cake, strawberry jam, candied orange peel and dark chocolate.

    An Oloroso sherry butt that waited 25 years. Distilled in 1997, bottled in 2023 — and somewhere in between, Bowmore's peat and coastline merged with the cask's dark fruit in a way that simply cannot be planned.

    Bowmore 1997/2023 Symingtons Choice 25 Year is an Islay Single Malt Scotch Whisky bottled as a Single Cask from an Oloroso Sherry Butt at 55.9%. Signatory Vintage released the Symingtons Choice series in 2023 as a tribute to founder Andrew Symington — a collection of carefully selected, aged single casks from Scotland's finest distilleries. This Bowmore from 1997 was drawn from cask no. 2422, a first-fill Oloroso sherry butt, at full cask strength. Distilled on 23 September 1997 and bottled on 9 February 2023 — exactly 25 years in cask. During that time, the sherry and the whisky's maritime DNA slowly found one another: dark fruit and smoke, sea air and oak. Non-chill filtered, natural colour. Bottle 427 of 616.

    Tasting notes

    Nose

    Rich and warming. Dried plums, dark orange marmalade and fig. Behind it, Bowmore's characteristic sea salt and restrained smoke — now wrapped in sherry depth and beeswax.

    Taste

    Full and concentrated. Figs, dark chocolate and orange peel. The peat is present but gentle — a background note rather than the main event. Oak tannins give structure.

    Finish

    Very long and complex. Dried fruits, spice and lingering coastal smokiness. Dark chocolate and leather develop slowly as the glass empties.

    Some distilleries never become household names on the shelf. They work quietly, supply malt for other people's blends, and only rarely let a single bottle out on its own. Braes of Glenlivet is one of them.

    Braes of Glenlivet 1979/1995 Signatory Vintage 15 Year Old is a Single Malt Scotch Whisky, matured in sherry casks and bottled at 43%.

    The whisky comes from the Braes of Glenlivet distillery, today known as Braeval, rarely seen bottled as a single malt since most of its production traditionally goes into blends. This release was distilled on 6 June 1979 and bottled by the independent bottler Signatory Vintage in May 1995 from two sherry casks (cask no. 16042 and 16043), after 15 years of maturation. Only 1,200 bottles were released in Signatory Vintage's classic dumpy bottle, making it a sought-after collector's item from a distillery rarely seen in this form.

    Tasting Notes

    Nose

    Dark amber with a reddish tint, and an aroma of roasted nuts, dark berries, raisins, leather and old orange peel, in a complex and harmonious sherry nose with a hint of tobacco and herbs.

    Palate

    Soft and full with dates, raisins, old oak and black pepper, carried by leather, a light sulphur note, tobacco, menthol and a touch of liquorice.

    Finish

    Long and warm with dark fruit and a lingering sherry character.

    Twenty-one years in a refill sherry butt does not sound like much on paper. But a used cask works slowly, and when it finally lands, it is the distillery you taste — not the wood.

    Braeval 2000/2021 Signatory Vintage 21 Years is a Single Speyside Malt Scotch Whisky from Refill Sherry Butt #6392, bottled at cask strength, 59.2%, with natural colour.

    The whisky was distilled on 16 February 2000 and bottled on 13 August 2021. The cask gave 592 bottles, which fits a butt of around 500 litres, and the whole run comes from the same day's production at Braeval.

    A refill cask has already given most of its sherry character to an earlier filling. The whisky therefore does not turn dark and heavy but keeps Braeval's light, floral style with a quiet sherry note underneath.

    Nose

    Baked apple and heather with a layer of dried apricot, almond and pale oak.

    Palate

    Concentrated and malty with honey, nuts and a fine fruit acidity. The alcohol is high, but the fruit keeps pace.

    Finish

    Andrew Symington has tasted his way through thousands of casks over the years, and when he puts his own name on a series, it's worth paying attention.

    Expert's Description

    Bunnahabhain 2001/2025 Symington's Choice 23 Years Old is an Islay Single Malt Scotch Whisky matured in an oloroso sherry butt and bottled at cask strength, 59.5%.

    Symington's Choice is Signatory Vintage's newer series, named in honour of the founder himself, gathering some of the most richly matured casks from the house's vast stock. This Bunnahabhain was distilled in October 2001 and rested for 23 years on cask #1438, before being bottled straight from the wood in April 2025.

    The long maturation on oloroso sherry has given the whisky a deep, almost mahogany hue, and at 59.5% cask strength, every drop of water you add opens fresh layers in the glass.

    Nose

    Dark chocolate, dried plums and a warm spiciness of nutmeg and cinnamon.

    Palate

    Bunnahabhain 2007/2019 Signatory Vintage 12 Years Old is an Islay Single Malt Scotch Whisky matured in a 1st fill sherry butt and bottled at cask strength, 58.1%.

    Signatory Vintage filled this cask, #589, in February 2007 and left it undisturbed for twelve years, before drawing it straight from the wood in October 2019 without reducing the strength. That leaves a whisky with all the power the sherry cask has to offer, and nothing added to soften it.

    587 bottles came from this single cask, and no two are quite alike from first pour to last – that's the nature of a single cask.

    Bunnahabhain 2013/2023 Signatory Vintage 9 Years Old is an Islay Single Malt Scotch Whisky matured in a 1st fill Pinot Noir red wine butt and bottled at 46%.

    Signatory Vintage has bought casks from distilleries across Scotland since 1988 and bottled them under its own name, without dressing the spirit up as something it isn't. This Bunnahabhain from 2013 was drawn from two casks, #13 and #15, and spent nine years pulling colour and spice from the red wine wood before being bottled in March 2023.

    The base spirit is the distillery's rarer peated make, known as Staoisha, which gives the whisky an extra layer of smoke beneath the wine cask's fruity sweetness – a combination you don't see from Islay every day.

    Nose

    Red berries and a tart wine sweetness meet a faint peaty smoke in the background, tied together by a hint of fresh bread.

    The whisky was distilled in 1987 and bottled in 2018 in a run of 249 bottles. Caledonian was founded in 1855 in Edinburgh's Dalry district and closed in 1988, which places this spirit among the final production years.

    Grain whisky is rarely matured for three decades, because it is traditionally used young in blends. That is precisely why old grain bottlings have become a category of their own: the light, creamy character develops over time into vanilla, fudge and coconut with a velvet texture.

    The whisky was distilled on 24 July 1991 and bottled on 19 January 2015. The cask gave 541 bottles, which fits a butt of around 500 litres. Cambus closed in 1993, so the spirit comes from its final production years.

    A refill cask is the right type for grain whisky meant to sit for a long time. It gives up its influence slowly and lets the light spirit develop vanilla, coconut and fudge without being smothered in oak.

    Caol Ila supplies its distillate primarily to Diageo's blends, which is precisely why single-cask bottlings like this are rare and sought after. Thirteen years in bourbon oak have produced a Caol Ila with more concentration and depth than the official range.

    Clynelish 1995/2024 Symingtons Choice 28 years is a Highland Single Malt Scotch Whisky matured in an oloroso sherry butt and bottled at cask strength of 53.5%.

    The cask is numbered 11250, was filled on 21 November 1995 and emptied on 29 April 2024. It gave 447 bottles. The Symingtons Choice range is named after Signatory founder Andrew Symington, who entered the Whisky Magazine Hall of Fame in 2021. Leaving Clynelish for 28 years in oloroso is a bold call — the distillery's waxy core can easily be buried in sherry, but here the two hold each other in check.

    Tasting notes

    Nose

    Deep and dark. Raisin, fig and toffee first, then orange peel, walnut and a damp tobacco note from the old wood.

    Palate

    Full and oily. Dried fruit, dark chocolate, candied ginger and a layer of cocoa. Beneath the sherry, Clynelish still pulls with its waxy texture and a trace of salt.

    Finish

    Very long and warm, with fig, nuts, dark cocoa and a dry spiced close that keeps going.

Signatory Vintage was founded in 1988 by Andrew Symington and is among the most prolific independent bottlers in Scotland. Craigellachie makes a heavy, meaty spirit in worm tubs, and an oloroso butt over ten years lays dried fruit on top without being able to drown the minerality.

    Nose

    Concentrated and dark. Raisin, fig and orange peel, with walnut, dark chocolate and a flinty note under the sherry.

    Palate

First fill means it went straight from sherry to Scotch with nothing in between, which gives a far stronger cask influence than a refill. Signatory buys casks from distilleries across Scotland and bottles them under its own name.

    Tasting notes

    Nose

    Dense and dark. Syrupy raisin, black cherry and orange marmalade, with cinnamon, dark cocoa and a dry nutty note.

    Palate

    Fiercely concentrated. Fig, date, chocolate and burnt sugar, with a peppery warmth and a dry sherry edge. The distillery's mineral core sits underneath and keeps the sweetness from running away.

    Finish

    Very long, dry and spiced, with dark fruit, oak and a slowly fading warmth.

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.

Production & style

Since Signatory only distils at Edradour itself, the house style is really about selection rather than production: casks from across Scotland are chosen individually for flavour and potential, matured further in Signatory's own warehouses, and typically bottled without chill filtration or added colour. Many releases come at Cask Strength, so you get the whisky exactly as it left the cask.
