For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising.     Caol Ila 2010/2021 Signatory Vintage 10 Year Old Islay Single Malt Scotch Whisky is an independent bottling from Signatory Vintage, distilled in 2010 and bottled in 2021 after 10 years of maturation, bottled at 43%. Caol Ila Distillery was founded in 1846 on the shore of the Sound of Islay, from which the distillery also takes its name — Gaelic for 'Sound of Islay'. The distillery is today owned by Diageo and is one of Islay's largest producers, although much of its output has traditionally gone into blended whisky such as Johnnie Walker. Despite its peated character, Caol Ila is often somewhat lighter and more elegant than several of Islay's other distilleries.

    Nose

    The nose is smoky with sea breeze, citrus and a hint of grain.

    Palate

    The palate offers smoke, citrus and light sweetness.

    Finish

    The finish is medium to long, smoky and fairly gentle.

    Speyside (GL) 16 Year Old Signatory Exceptional Cask 100 Proof Edition #8 is a Speyside Single Malt Scotch Whisky, bottled at cask strength of 57.1%.

    The bottle belongs to Signatory Vintage's Exceptional Cask series, where independent releases from named and undisclosed distilleries are gathered under a single theme: casks that stand out from the crowd. The distillery behind this release has not been disclosed, but the character points clearly toward Speyside's classic, sherry-driven style. 16 years of maturation has given the whisky a deep, concentrated sherry character, and the Edition #8 number confirms there are several casks behind the series, of which this one was selected for its power and weight.

    Andrew Symington has tasted his way through thousands of casks over the years, and when he puts his own name on a series, it's worth paying attention.

    Expert's Description

    Bunnahabhain 2001/2025 Symington's Choice 23 Years Old is an Islay Single Malt Scotch Whisky matured in an oloroso sherry butt and bottled at cask strength, 59.5%.

    Symington's Choice is Signatory Vintage's newer series, named in honour of the founder himself, gathering some of the most richly matured casks from the house's vast stock. This Bunnahabhain was distilled in October 2001 and rested for 23 years on cask #1438, before being bottled straight from the wood in April 2025.

    The long maturation on oloroso sherry has given the whisky a deep, almost mahogany hue, and at 59.5% cask strength, every drop of water you add opens fresh layers in the glass.

    Nose

    Dark chocolate, dried plums and a warm spiciness of nutmeg and cinnamon.

    Palate

    Intense and full with sherry sweetness, walnuts and a wave of warmth that speaks to the cask strength.

    Cask number 9. Not one of the long numbers that usually fill Signatory labels, but a single low figure — and behind it sits a Glendullan that spent its final stretch in a 1st fill oloroso hogshead.

    Glendullan 2009/2025 Signatory Vintage 15 Year Old is a Speyside Single Malt Scotch Whisky with a finishing period in a 1st fill oloroso sherry hogshead, bottled at cask strength 55.6%.

    The spirit went into cask on 19 November 2009 and was bottled on 11 April 2025 from cask number 9. The bottling gave 344 bottles, non-chill filtered and with no added colour, and forms part of the Signatory Cask Strength Collection. A 1st fill oloroso hogshead works quickly, and even a short finish leaves clear marks.

    Glendullan was built in 1897 by the Aberdeen blender William Williams and sits in Dufftown in the middle of Speyside. The distillery supplies large volumes to the Diageo blends today, not least Old Parr, so only a fraction of production is ever bottled under its own name.

    Tasting notes

    Nose

    Dark raisins and toasted almonds, with rich caramel and a trace of cinnamon. Beneath the sherry lies a warm, sweet malt note.

    Palate

    Full and layered. Sherry-soaked figs, dark chocolate, nutmeg and oak spice. The interplay between dried fruit and spice keeps the 55.6% in check.

    Finish

    Long and warming. Lasting sweetness from the dried fruit and subtle tannins fading gradually into toasted oak.

    Glendullan is one of the cornerstones of Old Parr, a blend that has never taken up much room in Europe but has been large in South America and Asia for decades. That is a large part of why the distillery is so little known closer to home.

    A 2nd fill cask has already given away most of its colour and sweetness once. What remains comes slowly, which is why nine years in a used Oloroso butt tastes like something other than nine years in fresh wood.

    Ben Nevis 2014 Signatory Vintage 9 years Decanter Collection is a Highland Single Malt Scotch Whisky matured in 2nd fill Oloroso sherry butts and bottled at 46 % without chill filtration and without added colour.

    The whisky was distilled in 2014 and lay nine years in cask. The casks held sherry and then whisky once before, which gives a more measured influence than first fill wood would. The result is a balance between fruity shades and spiced notes rather than a heavy sherry bomb.

    There is a sister bottling in the same series from the same vintage, drawn a year earlier. Compared with that one this has had a little more time to gather itself, and the difference between the two is one of the clearest examples of what a single extra year in a butt does.

    Nose

    Raisin, orange peel and a hint of almond. The sherry is clear but bright and dry rather than heavy.

    Palate

    Rich and harmonious with dried fruit, spice and a malt core carrying it all. There is depth without heaviness.

    Round and creamy, with malty sweetness, citrus peel and a mild spice from the oak. The lack of filtration gives a noticeably fuller body than many other 12-year-old Speyside malts.

    The spirit went into cask in 2012 and was bottled in 2023 after eleven years. 1st fill bourbon barrels and a strength above 57% make a powerful combination on a spirit of that age — there is plenty of vanilla and wood, but the malty core of Glen Ord is robust enough to carry it. The whisky is neither chill filtered nor coloured.

    Signatory has run the 100 Proof range for many years as its most recognisable format. The idea is simple: the same fixed strength every time, so it is the distillery and the cask that change, not the frame. That makes the range one of the more useful tools if you want to compare Scottish distilleries directly.

    Nose

    Vanilla, coconut and freshly cut apple. Behind that sits a malty, cereal tone and a trace of pine that the high strength pushes forward.

    Caol Ila supplies its distillate primarily to Diageo's blends, which is precisely why single-cask bottlings like this are rare and sought after. Thirteen years in bourbon oak have produced a Caol Ila with more concentration and depth than the official range.

    The spirit went into cask in 2008 and was bottled on 25 March 2024. 1st fill sherry butts are the heaviest tools in the box — a butt holds around 500 litres, and when it is filled with oloroso for the first time it gives everything it has. On a bright, fruity spirit like Glenburgie’s that is a direct confrontation. The whisky is neither chill filtered nor coloured.

    The 57.1% is no accident. Signatory's 100 Proof range holds every bottling at exactly 100 degrees British proof, and the Exceptional Cask mark is used when the casks sit above the normal level of the range in Signatory's own judgement. Edition #2 is the second release under that mark.

    Secret Orkney 2009/2023 Signatory Vintage 13 Year Old is a Single Malt Scotch Whisky matured in refill hogsheads and bottled at 46%.

    The distillery behind the discreet name cannot be printed on the label, but Orkney is home to only two distilleries, and the cask codes point firmly towards Highland Park. Signatory Vintage filled the whisky into a run of refill hogsheads, cask numbers DRU 17/A67-9/-10/-13/-21, without adding colouring or chill filtering before bottling.

    The whisky was distilled on 31 March 2009 and left to mature until January 2023, when 483 bottles were filled — a small, hand-picked release that shows Orkney character in an unfiltered, natural state.

    Tasting Notes

    Nose

    Heather blossom and a whisper of smoky peat meet salt sea air and ripe apple, with a soft honey sweetness underneath tying it all together.

    Palate

    Soft and lightly oiled, with citrus peel, toasted malt and a warm spice run of ginger and clove. The natural colour keeps the flavour clean and direct.

    Finish

    Medium in length, gently peated towards the end, with a lingering heather sweetness and a touch of salted caramel that fades slowly.

    Nose

    A textbook sherry bomb with bags of raisins, figs, nutmeg, cinnamon and ginger. Dark sugar, walnut and golden syrup. Bright cherry top notes.

    Dried fruits lead with raisins and dried plums. More oak than the nose with notes of charcoal and dark chocolate. Cherry and sherry-soaked orange zest.

    Finish

    Medium to long finish with dark fruits and gentle oak bitterness. The sherry cask's deep imprint lingers for a considerable time.

    Bunnahabhain 2007/2019 Signatory Vintage 12 Years Old is an Islay Single Malt Scotch Whisky matured in a 1st fill sherry butt and bottled at cask strength, 58.1%.

    Signatory Vintage filled this cask, #589, in February 2007 and left it undisturbed for twelve years, before drawing it straight from the wood in October 2019 without reducing the strength. That leaves a whisky with all the power the sherry cask has to offer, and nothing added to soften it.

    587 bottles came from this single cask, and no two are quite alike from first pour to last – that's the nature of a single cask.

    Nose

    Dark sherry, raisins and a rich hint of leather, carried on a warm, spiced note of cloves.

    Palate

    Powerful and concentrated with dried fruit, walnuts and a wave of spiced warmth from the cask strength.

    Second fill after Islay. Two words that say a great deal: the cask has held bourbon, then a heavily peated Islay, and now Ardmore for thirteen years. There is not much force left in the wood, and that is exactly the point.

    Ardmore 2009/2023 Signatory Vintage 13 Years Old is a Highland Single Malt Scotch Whisky matured in second fill bourbon casks after Islay whisky and bottled at 46%. It was distilled in 2009 and bottled in 2023 in Signatory’s Un-Chillfiltered Collection.

    The difference from a first fill is marked. A second fill cask gives up less vanilla, less colour and less tannin, so Ardmore’s own peated character gets far more room. What Islay phenols remain in the staves are correspondingly muted, sitting as a suggestion rather than a layer.

    Thirteen years is a long time for a cask that gives little. The result is a whisky where the spirit stands at the front and the wood keeps to the background. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Dry smoke and toasted malt first, with honey and a light citrus peel behind. The vanilla is subdued, and a clean cereal note runs through it all. This is the spirit talking, not the cask.

    Palate

    Malty and dry. The smoke arrives early and stays, with honey and baked apple underneath. There is a light saline undercurrent from the cask’s Islay past and a dry, peppery turn mid-palate. At 46% the body is good without being heavy.

    Finish

    Medium and dry. Ash, malt and a lightly bitter oak note that lets go cleanly.

    The release belongs to Signatory's Small Batch range, in which several casks are married into one expression rather than bottled individually. That gives more balance and a steadier character without the distillery style disappearing. Craigellachie still condenses in worm tubs and makes a heavy, almost meaty spirit, and eleven years is enough to round the edges without the cask starting to take over.

    Nose

    Young and fresh. Green apple, pear and pineapple, with cereal, vanilla and a dry mineral note underneath.

    Palate

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.

Production & style

Since Signatory only distils at Edradour itself, the house style is really about selection rather than production: casks from across Scotland are chosen individually for flavour and potential, matured further in Signatory's own warehouses, and typically bottled without chill filtration or added colour.
