For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising. This is whisky where the distillery's soul is never drowned in colouring or filtration, and where every cask tells its own story.

    Deanston is known for pale honey and bourbon wood. Put the spirit in a first fill sherry cask for thirteen years and the house becomes almost unrecognisable.

    Expert description

    Deanston 2007/2021 Signatory Vintage 13 years is a Highland Single Malt Scotch Whisky matured in a first fill sherry butt and bottled at cask strength of 64.5% without added colouring.

    The cask carries the number 900146, was filled on 14 June 2007 and emptied on 12 March 2021. The outturn was 624 bottles. Signatory Vintage was founded in 1988 by Andrew Symington and buys casks from distilleries across Scotland. Deanston rarely sells casks on, so an actively sherried version like this exists essentially only through independent bottlers.

    Tasting notes

    Nose

    Dark and concentrated. Raisin, fig and orange peel, with cocoa, walnut and a warm spiced note from the wood.

    Palate

    Massive but round. Dried fruit, dark chocolate and caramelised sugar, with Deanston's honey beneath the sherry and a peppery warmth from the strength.

    Finish

    Very long and dry, with nuts, dark fruit and a persistent spiced warmth.

    Teaninich 1983/2018 is a 35-year-old Highland Single Malt Scotch Whisky, distilled on 7 December 1983 and bottled on 12 December 2018 by Signatory Vintage at 57.5% ABV.

    The whisky comes from a refill butt, cask no. 8070, and was bottled in just 575 bottles as part of Signatory Vintage's 30th anniversary celebrations. It is neither chill-filtered nor coloured, and the many years of maturation in the reused cask have given the spirit great depth without letting oak dominate.

    At 35 years old, this Teaninich ranks among the rarest releases from the distillery, where most official bottlings are typically far younger.

    Nose

    Ripe tropical fruit, beeswax and a delicate hint of old oak.

    Palate

    Silky smooth, with notes of honey, dried apricot and a light spiced warmth.

    Finish

    Long and elegant, with lingering sweetness and a touch of sandalwood.

  • Caledonian Signatory Vintage bottle from a closed grain distillery

    Caledonian sat in the middle of Edinburgh and was in its day the largest grain distillery in Europe. Today there are flats on the site, and the only thing left stands in bottles.

    Caledonian 1987/2018 Signatory Vintage 31 Years is a Single Grain Scotch Whisky bottled at 50.2% without chill filtration and without added colour.

    The whisky was distilled in 1987 and bottled in 2018 in a run of 249 bottles. Caledonian was founded in 1855 in Edinburgh's Dalry district and closed in 1988, which places this spirit among the final production years.

    Grain whisky is rarely matured for three decades, because it is traditionally used young in blends. That is precisely why old grain bottlings have become a category of their own: the light, creamy character develops over time into vanilla, fudge and coconut with a velvet texture.

    Nose

    Vanilla and cream caramel with coconut, ripe pear and a stroke of freshly cut oak.

    Palate

    Silky and creamy with toffee, honey and citrus oil. There is a fine grainy elegance that only long maturation delivers.

    Teaninich 2007/2018 is a 10-year-old Single Highland Malt Whisky, distilled on 22 November 2007 and bottled on 5 March 2018 by Signatory Vintage at 46% ABV.

    The whisky comes from two hogsheads, no. 702715 and 702716, vatted together to produce a slightly larger and more approachable release than a pure single cask bottling would allow. It is neither chill-filtered nor coloured, and its 10 years in cask have left a spirit that still clearly carries Teaninich's young, cereal-focused character.

    At 46%, the strength sits above the common standard of 40%, giving the whisky extra sharpness and clarity in the flavour picture.

    Nose

    Fresh cereal, lemon zest and a light green note of unripe apples.

    Palate

    Crisp and clean, with notes of pear, vanilla and a touch of white pepper.

    Two hogsheads, filled on the same day in May 1997, emptied on the same day in February 2018. Exactly twenty years and eight months in between. Signatory has a habit of writing the dates out in full, and here it gives a neat picture of how closely the two casks tracked each other.

    Glen Keith 1997/2018 Signatory 20 Year Old is a Speyside Single Malt Scotch Whisky from two hogsheads, bottled at 46%.

    The casks were filled on 26 May 1997 and emptied on 26 February 2018 — hogsheads number 72609 and 72610, married into one bottling, non-chill filtered and with no added colour. The 46% is chosen rather than cask strength, and it suits a spirit like Glen Keith: bright and lightly waxy, where too much alcohol easily tramples over the fruit.

    The spirit dates from 1997, which is two years before Glen Keith was mothballed. Seagram used the distillery as its experimental plant and ran trials on yeast strains and mashing here, so production varied more than at an ordinary Speyside distillery. That is exactly why the year on a Glen Keith matters more than on most others.

    Tasting notes

    Nose

    Bright and clean. Pear, green apple and lemon peel, with vanilla and a dry malt note behind. After a couple of minutes a trace of beeswax emerges.

    Palate

    Soft and lightly oily. Honey, ripe pear and pale caramel, with a hint of toasted almond. The dryness only arrives at the end and keeps the whisky from turning dully sweet.

    Finish

    Medium. Malt, pear and a dry, faintly peppery close.

    Twenty years is a round number, and Signatory waited for it. The casks were filled in October 1997 and not emptied until February 2018, two decades in which the only things that happened were evaporation and time.

    Fettercairn 1997/2018 Signatory Vintage 20 Years Old is a Highland Single Malt Scotch Whisky matured in two hogsheads and bottled at 46%.

    The bottling belongs to The Un-Chillfiltered Collection, the Signatory range where the whisky is never chilled and filtered but bottled at 46% in natural colour. The casks, numbers 5604 and 5605, were filled on 10 October 1997 and bottled on 28 February 2018.

    Twenty years is a long time for the light Fettercairn spirit, and yet the oak has never become dominant. That is down to the hogshead format, where the ratio of wood to liquid is gentle enough for the whisky to mature at length without drying out.

    Nose

    Ripe orchard and vanilla first, then waxed wood, lemon peel and a dusty cereal note underneath.

    Palate

    Malt and pale caramel do the carrying, while yellow fruit and a touch of coconut rise out of the oak. The spice is dry and restrained.

    Finish

    Long and dry with mineral, white pepper and a final note of honey on toast.

    Glentauchers 1996/2015 was distilled in the mid-1990s and bottled in November 2015 by independent bottler Signatory Vintage, after 19 years of maturation in two bourbon casks, Cask No. #1407 and #1408.

    The whisky is bottled at 49.9% with natural colour. 328 bottles were filled from the two casks, making this a fairly limited release.

    Norway buys its spirits through a state monopoly, and when Vinmonopolet picks a single cask it does so after a blind tasting with no regard for name or label. This cask made it through. It is number 21 in the series.

    The Expert's Description

    Ardmore 2008/2015 Signatory Vintage 7 Years Old is a Highland Single Malt Scotch Whisky matured in a Bourbon Barrel and bottled at 40%. Cask 800083 was distilled in 2008 and bottled in 2015 as a single cask for Vinmonopolet, giving 357 bottles.

    The combination is unusual: a single cask at 40%. Most single cask releases go into the bottle at cask strength, but here the whisky has been reduced to standard strength. In return it is neither chill filtered nor coloured, which at 40% requires a cask with real body behind it.

    Ardmore makes peated whisky as its core style at around 12 to 14 ppm. After seven years in a bourbon barrel the smoke is still fresh and direct, with the cask’s vanilla and cereal standing clearly alongside.

    Tasting Notes

    Nose

    Vanilla and pale malt first, with peat smoke as a dry line underneath. There is honey and green apple in it, plus a light soot or ash note that tells you peat is in play.

    Palate

    Soft and straightforward. Malt, vanilla and baked apple open, then the smoke arrives as a dry earthy floor along with a light peppery spice. At 40% it drinks easily, and the smoke never dominates.

    Finish

    Medium length. Malt, honey and a dry smoky note that lets go calmly without bitterness.

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.

Production & style

Since Signatory only distils at Edradour itself, the house style is really about selection rather than production: casks from across Scotland are chosen individually for flavour and potential, matured further in Signatory's own warehouses, and typically bottled without chill filtration or added colour. Many releases come at Cask Strength, so you get the whisky exactly as it left the cask.
