For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising. This is whisky where the distillery's soul is never drowned in colouring or filtration, and where every cask tells its own story.

    Dalmore from an independent bottler is a rare sight. Dalmore from 1990 in a single sherry butt at full cask strength is close to an anomaly.

    Dalmore 1990/2008 Signatory Vintage 17 years is a Highland Single Malt Scotch Whisky matured in a sherry butt and bottled at cask strength of 59.2% without added colouring.

    The cask carries the number 9411, was filled on 11 September 1990 and emptied on 25 March 2008. The outturn was 501 bottles. Dalmore sits at Alness on the shore of the Cromarty Firth and is known for its heavy, sherried house style — which is exactly why a single sherry cask suits the spirit so well. The distillery lets very few casks go on to independent bottlers, making this release unusual.

    Tasting notes

    Nose

    Deep and dark. Raisin, orange peel and dark chocolate, with walnut, leather and a warm spiced note from the wood.

    Palate

    Massive and concentrated. Dried fruit, cocoa and caramelised sugar, with a peppery warmth from the strength and a dry sherry edge keeping the sweetness in check.

    Finish

    Very long and dry, with nuts, dark fruit and a persistent spiced warmth.

    The cask carries the number 900146, was filled on 14 June 2007 and emptied on 12 March 2021. The outturn was 624 bottles. Signatory Vintage was founded in 1988 by Andrew Symington and buys casks from distilleries across Scotland. Deanston rarely sells casks on, so an actively sherried version like this exists essentially only through independent bottlers.

    Nose

    The cask is numbered 900076, was filled on 13 August 2008 and emptied on 11 March 2022 with an outturn of 574 bottles. The release belongs to Signatory's Cask Strength Collection. A strength that high after thirteen years means the cask lost more water than alcohol — which happens in dry, airy warehouses rather than in damp earth-floored cellars.

    Nose

    Dense and dark. Raisin, date and orange marmalade, with dark chocolate, nuts and a warm spiced note.

    Palate

    The whisky was distilled on 17 November 2000 and matured for 23 years in a single 1st fill Oloroso sherry butt, cask #3151, before being bottled by Signatory Vintage on 29 April 2024. Only 656 bottles were drawn, and each bottle is individually numbered as part of the prestigious Symington's Choice series, which gathers some of the finest single casks from Signatory's warehouse.

    A cask filled on the last day of September 1996, and then seventeen years in which nobody touched it. Signatory left it standing until it was finished with itself, and bottled it as it was.

    Fettercairn 1996/2014 Signatory 17 Years Old is a Highland Single Malt Scotch Whisky matured in a single hogshead and bottled at 46%.

    The cask, number 4339, was filled on 30 September 1996 and bottled on 20 February 2014. Signatory Vintage of Pitlochry buys single casks from distilleries across Scotland and bottles them without chill filtration and without added colour, and it is exactly this kind of release where the character of Fettercairn is allowed to stand without being tidied up.

    Seventeen years in a hogshead is a calm maturation. The cask is large enough that the oak never takes charge, and the result is the clean, fruity house style in a more mature and restrained form than the official releases.

    Nose

    Soft notes of ripe barley, citrus oil and vanilla, with light tropical fruit and a touch of fresh oak and honey behind.

    Palate

    The casks, numbers 4351 and 4356, were filled on 30 September 1996 and bottled on 29 October 2015. Two casks from the same filling day give a slightly broader profile than a single cask without losing the stamp of the individual vintage.

    Nineteen years is enough for the light, sweet spirit of the distillery to gain depth without turning woody. The whisky is bottled in natural colour and without chill filtration, so every nuance stands untouched.

    Nose

    Opens with ripe cereal notes, citrus and vanilla, and a light tropical sweetness followed by fresh oak and a touch of honey.

    Palate

    The bottling belongs to The Un-Chillfiltered Collection, the Signatory range where the whisky is never chilled and filtered but bottled at 46% in natural colour. The casks, numbers 5604 and 5605, were filled on 10 October 1997 and bottled on 28 February 2018.

    Twenty years is a long time for the light Fettercairn spirit, and yet the oak has never become dominant. That is down to the hogshead format, where the ratio of wood to liquid is gentle enough for the whisky to mature at length without drying out.

    Nose

    Ripe orchard and vanilla first, then waxed wood, lemon peel and a dusty cereal note underneath.

    Palate

    Malt and pale caramel do the carrying, while yellow fruit and a touch of coconut rise out of the oak. The spice is dry and restrained.

    Finish

    Long and dry with mineral, white pepper and a final note of honey on toast.

    The spirit ran off the stills on 11 September 1996. Three years later Glen Keith closed, and fourteen years passed before production started again. This cask sat quietly through the whole of that period and was only emptied in 2023.

    Glen Keith 1996/2023 Signatory Vintage 26 Year Old is a Speyside Single Malt Scotch Whisky from a 2nd fill oloroso sherry butt, bottled at cask strength 58%.

    The cask was filled on 11 September 1996 and emptied on 7 July 2023 — sherry butt number 7, which gave 635 individually numbered bottles, non-chill filtered and with no added colour. The whisky belongs to Symington's Choice, where Andrew Symington selects the casks himself, and a 2nd fill oloroso butt is a deliberate call: there is sherry enough for depth and dried fruit, but not so much that a 26 year old spirit gets run over.

    Glen Keith only got its own permanent single malt onto the market in 2017. For the decades before that almost the entire output went into blends, and the only bottles a whisky drinker could realistically find came from independent bottlers. That is precisely why a 26 year old from 1996 is one of the few ways to meet the distillery as it worked before the shutdown.

    Tasting notes

    Nose

    Spicy and indulgent. Raisins, figs and dates first, then honey and a layer of soft vanilla. Leather sits behind it, along with a calm, dark spice note.

    Palate

    Velvety despite the 58%. Gingerbread and malt loaf, with blackstrap molasses and dried fruit filling the middle. A nutty bitterness arrives at the end and keeps the sweetness in check.

    Finish

    Very long. Dried fruit and spice drying slowly into walnut shell and a dry sherry note.

    Glen Keith did not have its own official single malt in the range until 2017. The distillery was built in 1957 and for six decades supplied malt almost entirely to other people's blends, while the independent bottlers kept the name alive for whisky drinkers.

    Glen Keith 1997/2018 Signatory 20 Year Old is a Speyside Single Malt Scotch Whisky from two hogsheads, bottled at 46%.

    The casks were filled on 26 May 1997 and emptied on 26 February 2018 — hogsheads number 72609 and 72610, married into one bottling, non-chill filtered and with no added colour. The 46% is chosen rather than cask strength, and it suits a spirit like Glen Keith: bright and lightly waxy, where too much alcohol easily tramples over the fruit.

    The spirit dates from 1997, which is two years before Glen Keith was mothballed. Seagram used the distillery as its experimental plant and ran trials on yeast strains and mashing here, so production varied more than at an ordinary Speyside distillery.     Nose

    Bright and clean. Pear, green apple and lemon peel, with vanilla and a dry malt note behind. After a couple of minutes a trace of beeswax emerges.

    Palate

    Soft and lightly oily. Honey, ripe pear and pale caramel, with a hint of toasted almond. The dryness only arrives at the end and keeps the whisky from turning dully sweet.

    Finish

    Medium. Malt, pear and a dry, faintly peppery close.

The whisky is neither chill filtered nor coloured.

    Signatory has run the 100 Proof range for many years as its most recognisable format.     The casks were filled on 7 October 2008 and emptied on 6 January 2022 — hogsheads number 318687 and 318690, married into one bottling, non-chill filtered and with no added colour. The 46% is Signatory’s standard choice for its unfiltered bottlings, and on a thirteen year old spirit from used hogsheads it is a sensible strength: enough to hold the texture, not enough to drown it.

    Glen Ord sits at Muir of Ord on the Black Isle north-west of Inverness and has been distilling since 1838, on land that belonged to the MacKenzies of Ord. The spirit is relatively full and malty for a Highland whisky, and hogsheads with no sherry involvement let precisely that cereal core stand forward.

    Nose

    Malt and cornfield first, then pear and a trace of heather honey. There is a dry, almost floury note that is typical of Glen Ord from used casks.

    The spirit went into cask on 19 November 2009 and was bottled on 11 April 2025 from cask number 9. The bottling gave 344 bottles, non-chill filtered and with no added colour, and forms part of the Signatory Cask Strength Collection. A 1st fill oloroso hogshead works quickly, and even a short finish leaves clear marks.

    Glendullan was built in 1897 by the Aberdeen blender William Williams and sits in Dufftown in the middle of Speyside. The distillery supplies large volumes to the Diageo blends today, not least Old Parr, so only a fraction of production is ever bottled under its own name.

    Distilled on 27 November 2006 and bottled on 22 April 2021 by Signatory, from two bourbon barrels, Cask No. 3291 and 3302, yielding 388 bottles – with no added colour and no chill filtration, so the colour is exactly what the casks gave it.

    Tasting Notes

    Nose

    Pale honey and vanilla custard with a hint of coconut from the bourbon cask. Beneath the sweetness sits a dry, cereal malt and a touch of green apple.

    Palate

    Powerful and sweet, with caramel, vanilla sugar and a warm, peppery spice. The bourbon cask's imprint is clear, but it never smothers the malt beneath.

    Finish

    Long and dry, with a faintly bitter oak note and a last trace of honey.

    Nose

    Creamy vanilla and lightly toasted oak meet a fresh citrus peel. Beneath the pale surface sits a clear malt sweetness.

    Palate

    Round and creamy, with malty sweetness, citrus peel and a mild spice from the oak. The lack of filtration gives a noticeably fuller body than many other 12-year-old Speyside malts.

    Finish

About Signatory Vintage Whisky

Signatory Vintage is one of Scotland's most prolific independent bottlers, a name any Single Cask Whisky browser will know well. The company bottles from a huge range of Scottish distilleries, from familiar Speyside names to rare, silent stills, always without chill filtration and without added colouring, so you get the distillery's raw, honest character in the glass. For collectors, it's the rare closed distilleries and high age statements that make Signatory worth chasing, while beginners can use the broad portfolio as a shortcut to tasting across Scotland's regions without buying a full bottle from every distillery.

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.

Production & style

Since Signatory only distils at Edradour itself, the house style is really about selection rather than production: casks from across Scotland are chosen individually for flavour and potential, matured further in Signatory's own warehouses, and typically bottled without chill filtration or added colour. Many releases come at Cask Strength, so you get the whisky exactly as it left the cask.
