For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising.     The bottle sits low and broad with a short neck, closer to an apothecary jar than a whisky bottle. Signatory has used that shape for its Decanter Collection for years, and it stands out on the shelf against everything else in the range.

    Ben Nevis 2014 Signatory Vintage 8 years Decanter Collection is a Highland Single Malt Scotch Whisky matured in Oloroso sherry butts and bottled at 46 % without chill filtration and without added colour.

    The Decanter Collection is the Signatory range in the distinctive broad bottle. The series holds a fixed bottling strength of 46 %, and casks are chosen for their ability to carry sherry influence without the distillery style disappearing. This whisky was distilled in 2014 and lay eight years in cask.

    Sherry butts hold around 500 litres, giving a lower wood to liquid ratio than smaller casks. Maturation is therefore slower and more restrained, and after eight years the weight of the Ben Nevis spirit still sits clearly beneath the dried fruit.

    Tasting notes

    Nose

    Dried fig, raisin and walnut with a dry sherry edge. Behind it sit malt and a suggestion of dark chocolate.

    Palate

    Full and dry with dark fruit, nut and spiced oak. The oily core of the spirit keeps the sherry in check all the way through.

    Finish

    Long and dry with nut, cocoa and a warm note of spice.

    The whisky is distilled at Linkwood and independently selected and bottled by Signatory Vintage as part of the The Un-Chillfiltered Collection series.

    It was distilled 25. juli 2012 and bottled Oktober 2023, giving it 11 years.

    Only 1565 bottles were released from this batch, making it an exclusive release for collectors.

    Nose

    The aroma offers ripe pears, citrus peel and dried fig.

    Palate

    The taste unfolds with blossom, walnut and sherry toffee.

    Finish

    The finish is short but concentrated, with raisins and ripe pears.

    From the north of Scotland to the Italian vineyards and back - this Teaninich has picked up an unexpected wine-inspired dimension from casks that once held one of Tuscany's most sought-after red wines.

    Teaninich 2009/2023 from Signatory is a 13 year old Single Highland Malt Scotch Whisky at 46%, bottled under Signatory's The Un-chillfiltered Collection range.

    The whisky matured in four first-fill hogsheads (cask no. #9, #13, #14 and #15) that previously held Bolgheri - a celebrated Italian red wine from the Tuscan coast. This unusual cask history gives the whisky a subtle, wine-touched dimension layered over Teaninich's classic light style.

    Distilled in September 2009 and bottled in March 2023 after 13 years of maturation, the whisky is non-chill filtered and naturally coloured. 701 bottles were released of this edition.

    Tasting notes

    Nose

    Red berries and a hint of dried herbs, backed by soft vanilla and lightly toasted malt.

    Palate

    Mild and round, with notes of raspberry, cherry and a delicate tannic structure from the wine casks.

    Finish

    Ardmore 2010/2023 Signatory Vintage 13 Years Old 100 Proof Edition #4 is a Highland Single Malt Scotch Whisky matured in 1st fill Oloroso Sherry Butts and bottled at 57.1%. Cask 137 was distilled in 2010 and bottled on 5 December 2023.

    The 100 Proof series gathers single malts from different Scottish distilleries, all bottled at precisely the same strength. That makes the series an unusually clean comparison: with the alcohol content identical, the differences between distillery and cask stand out without the strength clouding the picture.

    Here Ardmore’s peated Highland spirit meets first fill Oloroso wood. It is a forceful combination, since fresh sherry casks give dark fruit, tannin and colour in quantity, and the smoke has to work to get through. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Dark fruit first: raisins, prunes and preserved cherries. Beneath sit dry smoke and roasted nuts, along with a resinous sherry note that only first fill casks provide.

    Palate

    Full and dark. Raisins and bitter chocolate open, then the smoke arrives as a dry undercurrent alongside spiced oak and black pepper. At 57.1% the concentration is considerable, and sherry and smoke pull in opposite directions all the way.

    Finish

    Long and spiced. Dark fruit, ash and oak tannin, with a warmth that lingers well afterwards.

    Did You Know?

    The proof system comes from an old British method of checking whether spirit had been watered down: you poured it over gunpowder and set it alight.     Two hogsheads filled on the same day in 2008, bottled on the same day in 2021. Signatory prints both cask numbers on the label, and that is the whole difference between a named parcel and an anonymous batch.

    Auchroisk 2008/2021 Signatory 12 Years Old is a Single Speyside Malt Scotch Whisky matured for twelve years in two hogsheads and bottled at 43%. It belongs to Signatory’s Un-Chillfiltered Collection and is neither chill filtered nor coloured.

    Two hogsheads give a slightly larger parcel than a single cask, but it is still a manageable quantity, and cask numbers 813968 and 813969 are printed on the label. Signatory has used that approach since 1988.

    Auchroisk sits in Speyside and was built in 1974 by Justerini & Brooks to supply malt for the J&B blend. The style is bright, citrus-driven and lightly spiced, a Speyside that sits closer to fruit than to sherry.

    Tasting Notes

    Nose

    Bright and fresh. Vanilla, apple and a clear citrus note first, then honey and a lightly cereal pastry tone from the young spirit.

    Palate

    Soft and fruity. Vanilla and pear open, then citrus, a lightly peppered note and a dry oak tone arrive. At 43% there is good body, and the absence of chill filtration shows in the mouthfeel.

    Finish

    Medium and clean. Citrus, honey and a lightly spiced oak close.

    Cask no. 800308 and 800309 were filled on 18 September 2008 and emptied on 7 February 2022. The whisky carries its natural colour and is bottled at 43 %, the strength Signatory use for their more approachable range.

    Benrinnes sits in Speyside, but Signatory chose the Highland designation for this label — both are legal, because Speyside lies geographically within the Highland region. Under the label is the same heavy, worm tub cooled spirit the distillery has produced since its rebuild in the 1950s.

    Tasting notes

    Nose

    Toasted grain, caramel and ripe pears. A faintly salted note in the background makes the nose less sweet than the colour suggests.

    Palate

    Malty and dry with vanilla, walnut and baked apple. The oak is more evident than in the 12 year old, and there is more bite in the middle.

    Finish

    Long and dry with toasted malt, a hint of dark chocolate and a nutty aftertaste.

    Glen Ord is one of those distilleries most European whisky drinkers never meet officially. The official single malt is called Singleton and sells mainly in Asia. To taste the spirit closer to home, the route runs through the independent bottlers.

    Glen Ord 2008/2022 Signatory Vintage 13 Year Old is a Highland Single Malt Scotch Whisky from two hogsheads, bottled at 46%.

    The casks were filled on 7 October 2008 and emptied on 6 January 2022 — hogsheads number 318687 and 318690, married into one bottling, non-chill filtered and with no added colour. The 46% is Signatory’s standard choice for its unfiltered bottlings, and on a thirteen year old spirit from used hogsheads it is a sensible strength: enough to hold the texture, not enough to drown it.

    Glen Ord sits at Muir of Ord on the Black Isle north-west of Inverness and has been distilling since 1838, on land that belonged to the MacKenzies of Ord. The spirit is relatively full and malty for a Highland whisky, and hogsheads with no sherry involvement let precisely that cereal core stand forward.

    Tasting notes

    Nose

    Malt and cornfield first, then pear and a trace of heather honey. There is a dry, almost floury note that is typical of Glen Ord from used casks.

    Palate

    Firm and malty. Barley, apple and pale caramel, with a dryness mid-palate and a hint of toast. Not sweet, more cereal-led and tighter than most Speyside whiskies of the same age.

    Finish

    Medium. Malt, a dry oak note and a final touch of white pepper.

    Signatory Vintage has bought casks from distilleries across Scotland since 1988 and bottled them under its own name, without dressing the spirit up as something it isn't. This Bunnahabhain from 2013 was drawn from two casks, #13 and #15, and spent nine years pulling colour and spice from the red wine wood before being bottled in March 2023.

    The base spirit is the distillery's rarer peated make, known as Staoisha, which gives the whisky an extra layer of smoke beneath the wine cask's fruity sweetness – a combination you don't see from Islay every day.

    Nose

    Red berries and a tart wine sweetness meet a faint peaty smoke in the background, tied together by a hint of fresh bread.

    Palate

    The cask was filled in September 2010 and emptied in 2023, yielding 234 bottles. The whisky is neither chill filtered nor coloured, and the 46 % was chosen so the sherry character stands clear without alcohol dominance.

    Signatory buy casks from distilleries across Scotland and bottle under their own name. A first fill Oloroso butt is among the most expensive and most sought after casks in the trade, and it is rarely spent on a 12 year old — here it was.

    Nose

    Dried figs, walnut and orange peel. There is a dry, almost dusty sherry character typical of Oloroso rather than the sweeter sherry styles.

    Palate

    Full bodied with raisin, dark rye bread and bitter orange. Nuts step forward in the middle, and a spiced draught of clove runs through it.

    Finish

    Long and dry with walnut shell, dark chocolate and a pleasant bitterness.

    The spirit ran off the stills on 11 September 1996. Three years later Glen Keith closed, and fourteen years passed before production started again. This cask sat quietly through the whole of that period and was only emptied in 2023.

    Glen Keith 1996/2023 Signatory Vintage 26 Year Old is a Speyside Single Malt Scotch Whisky from a 2nd fill oloroso sherry butt, bottled at cask strength 58%.

    The cask was filled on 11 September 1996 and emptied on 7 July 2023 — sherry butt number 7, which gave 635 individually numbered bottles, non-chill filtered and with no added colour. The whisky belongs to Symington's Choice, where Andrew Symington selects the casks himself, and a 2nd fill oloroso butt is a deliberate call: there is sherry enough for depth and dried fruit, but not so much that a 26 year old spirit gets run over.

    Glen Keith only got its own permanent single malt onto the market in 2017. For the decades before that almost the entire output went into blends, and the only bottles a whisky drinker could realistically find came from independent bottlers. That is precisely why a 26 year old from 1996 is one of the few ways to meet the distillery as it worked before the shutdown.

    Tasting notes

    Nose

    Spicy and indulgent. Raisins, figs and dates first, then honey and a layer of soft vanilla. Leather sits behind it, along with a calm, dark spice note.

    Palate

    Velvety despite the 58%. Gingerbread and malt loaf, with blackstrap molasses and dried fruit filling the middle. A nutty bitterness arrives at the end and keeps the sweetness in check.

    Finish

    Very long. Dried fruit and spice drying slowly into walnut shell and a dry sherry note.

    Cambus 1991/2023 Signatory Vintage 31 Years is a Single Grain Scotch Whisky from Refill Oloroso Butt #104229, bottled at cask strength, 50.5%, without chill filtration and without added colour.

    The whisky was distilled on 3 December 1991 and bottled on 16 January 2023 as part of Signatory Vintage's Cask Strength Collection. The cask gave 330 bottles.

    Cambus closed in 1993, and spirit from 1991 is among the last it made. A refill oloroso butt releases sherry character slowly, and after three decades the nuts and dried fruit are woven into the sweetness of the grain rather than sitting on top of it.

First fill means it went straight from sherry to Scotch with nothing in between, which gives a far stronger cask influence than a refill. Signatory buys casks from distilleries across Scotland and bottles them under its own name.

    Nose

    Dense and dark. Syrupy raisin, black cherry and orange marmalade, with cinnamon, dark cocoa and a dry nutty note.

    Palate

    Fiercely concentrated. Fig, date, chocolate and burnt sugar, with a peppery warmth and a dry sherry edge. The distillery's mineral core sits underneath and keeps the sweetness from running away.

    Benrinnes 2012/2023 Signatory Vintage 10 years is a Speyside Single Malt Scotch Whisky matured in a bourbon hogshead and bottled at 58.9 % cask strength.

    Cask no. 310545 was filled on 25 June 2012 and emptied on 12 January 2023. The cask yielded 275 bottles, and the whisky is neither chill filtered nor coloured.

    A hogshead of roughly 250 litres is built from the staves of American bourbon casks, reassembled in a slightly larger format. It strikes a balance between cask influence and spirit character that suits a heavy distillate like Benrinnes' well.

    Nose

    Fresh and grainy with green apples, lemon peel and a hint of newly cut hay. The vanilla sits discreetly beneath the fruit.

    Palate

    Ardlair 2011/2023 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in a refill Oloroso Sherry Butt and bottled at 62.5% cask strength. Cask 900032 was distilled on 27 January 2011 and bottled on 11 January 2023 in Signatory's Cask Strength Collection, giving 597 bottles.

    Ardmore is one of the few Highland distilleries with peat smoke as a core style, and Ardlair is the name given to the unpeated production. Without the smoke the spirit’s own fruitiness and malt sweetness step forward more clearly, which makes the whisky far more receptive to a sherry cask.

    That the cask is refill rather than first fill matters here. A refill Oloroso Butt gives up less colour and less tannin, so the sherry settles as a layer on top instead of taking over. The whisky is bottled without filtration and without added colour.

    Tasting Notes

    Nose

    Raisins and figs first, with roasted nuts and honey behind. There is dried ginger and spice in it, and beneath the sherry sits a bright apple fruitiness that tells you the spirit is unpeated.

    Palate

    Dark chocolate and walnut open, followed by sweet sherry and spiced oak. The vanilla arrives late. At 62.5% the concentration is considerable, and the whisky takes water well, turning rounder rather than thinner.

    Finish

    Long and warming with persistent sherry sweetness and elegant oak tannins that let go slowly.

Casks #306899, #306905, #306911 and #306913 all went through the same treatment, where the innermost layer of wood is planed away and the cask charred anew. The method recharges a used cask and returns vanilla, caramel and pale spice.

    Blair Athol's spirit is heavy and malty, and the re-charred casks add sweetness without laying sherry or wine over it. The result is a clean reading of the distillery's own style.

    Braeval sits high in the Braes of Glenlivet and supplies almost entirely to blends. The spirit is light and floral, and a quiet refill cask lets exactly that character show rather than wrapping it in sherry.

    The whisky was distilled on 24 July 1991 and bottled on 19 January 2015. The cask gave 541 bottles, which fits a butt of around 500 litres. Cambus closed in 1993, so the spirit comes from its final production years.

    A refill cask is the right type for grain whisky meant to sit for a long time. It gives up its influence slowly and lets the light spirit develop vanilla, coconut and fudge without being smothered in oak.

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.
