    Behind the brand stands Bob Petrie, who as Head Pastry Chef at a Michelin-starred restaurant was approached by Guiliano Morandin of the newly refurbished Dorchester Bar in London, who wanted a range of bitters for the bar's new concept, "The Gin Experience". Petrie approached the task from a culinary angle rather than the traditional method of blending many herbs together, instead making bitters built on single, clear botanical ingredients, coriander among them. The approach gave bartenders far greater control over the flavour of each drink, and Bob's Bitters is now used in some of the world's best bars. The bottle has a dropper cap, making it easy to dose 4 to 8 drops at a time.

    In Ebeltoft, locals still tell the tale of the Molbo folk who were poured a bitter whenever they came to town. That same dram, drawn from an old recipe found behind a timber-framed house, sits in this glass today.

    Molbo Bitter is a Danish bitter at 35% ABV, bottled at 50 cl by the Danish producer Dalibra.

    The recipe is said to date back to the 1700s and is tied to the Molbo folk of the Mols peninsula, who according to local folklore, and Ludvig Holberg's play "Jeppe on the Hill", were served the bitter by the shoemakers of Ebeltoft. In 2001, Norwegian Per-Morten Hanssen bought a 300-year-old timber-framed house in Ebeltoft, and during renovation he found old recipes, including one for the bitter. After three years of development, Molbo Bitter reached the market in 2004, and in 2007 it was crowned "World's Best Dram" at The Wining & Dining Fair. The bottle is shaped after an 18th-century model, a period-true detail that underlines the story behind it.

There, in 1824, after four years of trials with tropical herbs and plants, he developed the secret herbal bitters that has since become the House of Angostura's trademark. The Cacao edition builds on that legacy with cocoa beans from Trinidad and Tobago, giving a nutty caramel character and a rich, bitter cocoa tone. It is meant as a highly concentrated flavour addition for drinks such as the Espresso Martini as well as for cooking.

The tradition behind it stretches back to the fortified Benedictine abbeys, where monks produced herbal elixirs believed to hold both medicinal and tonic properties. According to the family, the recipe has remained unchanged since 1868 and uses only natural ingredients.

    Behind the name stands N.K. Nielsen, who earned his medical degree in 1924 and opened his own practice in Hobro in October 1927. As a keen hunter and outdoorsman, he lived until 1937 in a wing of Hobro Apotek, where together with friends from the pharmacist family he spent many evenings developing the right bitter, an extract of 8 different herbs including bitter orange and star anise. Half a century later the family passed on the recipe, and in 1988 the bitter was launched commercially by Johs. M. Klein Distribution from Brondby.     Arnbitter is a Danish bitter at 50% ABV, bottled at 70 cl.

    The bitter was invented by Arne M. Hansen in a wine storage facility in Viby J. near Aarhus, together with cellar master Harald P. Sorensen; the exact starting date is unknown, but production is believed to have begun in the 1950s. Arnbitter spread commercially through the 1960s and had its breakthrough in 1970, winning gold at an international wine and spirits exhibition in Rotterdam on 2 October that year. The company Anthon Thorup acquired Arnbitter in 1978, and in 2015 the brand was sold to Just Drinks A/S, after which production moved to Copenhagen. The recipe is secret, but it is known to include ginger, liquorice root, cloves and saffron, blended in 2,500-litre copper tanks where it rests for three months before bottling.

    Von Oosten is a Danish bitter at 36% ABV, bottled at 70 cl, following a recipe that arrived in Denmark in 1899.

    The bitter was created by Simon Levy van Oosten, born in 1799 in Holland, who in 1841 moved himself and production to Hamburg, changing his name from the Dutch "van" to the German "von" along the way. The bitter was imported in barrels from Hamburg to Denmark at the end of the 19th century and traded by wine and spirits wholesaler Emanuel Moller & Co in Copenhagen. On 9 October 1908, Emanuel Moller & Co, together with Marinus Moller & Co, bought the rights to the name and production for Denmark from merchant Eduard Zaun in Hamburg. When production in Hamburg ceased during the Second World War and was never resumed, Denmark became the only country still making the original Von Oosten Bitter today.

    Riga Black Balsam Herbal Bitter is a Latvian herbal bitter at 45% ABV, bottled at 70 cl.

    The recipe dates back to 1752, when pharmacist Abraham Kunze in Riga created a medicinal tonic drawing on balsam traditions that already reached back to the 1500s. Legend has it the balsam saved Catherine the Great from stomach trouble during a visit to the city. The recipe holds 24 ingredients, including birch shoots, raspberry, ginger, black peppercorns, peppermint, lemon leaves and honey, most of which are infused individually before being blended and rested in large oak barrels to develop the characteristic strength and light bitter-sweetness. The recipe was lost during the Second World War but was recreated by former employees and has since been kept unchanged, known only to the distillery's Head Liquor Master and his two apprentices.

In 1904 production moved to Sesto San Giovanni, where Campari Group is still headquartered today, and his son Davide Campari carried the legacy forward. The bitter is now essential in cocktails such as the Negroni and Americano.
