    Somewhere in Milan, not far from the Duomo, a recipe has been locked in a safe since 1845 - accessible to exactly one person in the entire company. Five generations of the Branca family later, that hasn't changed.

    Expert Description

    Fernet-Branca is an Italian Bitter built on more than 27 herbs, roots and spices, bottled at 42%.

    This is not the bottle sitting in your local wine shop's fridge today. It's an older German-market bottling, distributed by Fratelli Branca GmbH in Weinstadt-Großheppach, with Weinbrennerei Jacobi KG named on the label - a period when Fernet-Branca for the German market was bottled at 42% and sold under a label design that has long since been discontinued. The details give it away: the oval "Stammhaus gegr. 1845" seal with the eagle on the globe, the lengthy authenticity text warning against imitations, and the barcode printed at the bottom of the back label.

    The liquid inside hasn't changed with the label, though. Rhubarb from China, gentian from France, galangal from India or Sri Lanka, chamomile from Europe and Argentina, myrrh and saffron - ingredients sourced across continents, macerated and distilled, then rested in oak casks for roughly a year before the flavour is allowed to settle.

    Taste

    The nose is heavy and herbal, with a hint of mint and citrus before the bitterness properly announces itself. On the palate it's dark and complex - myrrh and saffron bring spiced depth, while rhubarb and gentian pull a sharp, clean bitterness through the whole sip. The finish is long, faintly menthol, and dry, with a sweetness that never quite takes over.

    Behind the recipe stands Curt Mast, who in 1934 in Wolfenbuttel took over the family's vinegar and wine business from his father Wilhelm Mast. Curt Mast spent several years refining a blend of 56 different herbs, roots, spices, flowers and fruits before the recipe was finished, a recipe that, according to the official brand, has not changed since. The name Jagermeister means "master hunter", and the stag logo with its glowing cross between the antlers references the legend of Saint Hubertus, the patron saint of hunting. It is the very same recipe that is drunk ice-cold around the world today.

    In Ebeltoft, locals still tell the tale of the Molbo folk who were poured a bitter whenever they came to town. That same dram, drawn from an old recipe found behind a timber-framed house, sits in this glass today.

    The recipe is said to date back to the 1700s and is tied to the Molbo folk of the Mols peninsula, who according to local folklore, and Ludvig Holberg's play "Jeppe on the Hill", were served the bitter by the shoemakers of Ebeltoft. In 2001, Norwegian Per-Morten Hanssen bought a 300-year-old timber-framed house in Ebeltoft, and during renovation he found old recipes, including one for the bitter. After three years of development, Molbo Bitter reached the market in 2004, and in 2007 it was crowned "World's Best Dram" at The Wining & Dining Fair. The bottle is shaped after an 18th-century model, a period-true detail that underlines the story behind it.

    The bitter, also known as Nordsoe Olie, was developed in a family kitchen and launched in 1982 after many attempts, achieving cult status in the 1980s as one of the first liquorice-based shots made in Denmark. After 12 years on the market it was sold in 1994 to De Danske Spritfabrikker, which the following year changed its name to Danisco. From there it passed to Swedish V&S Vin & Sprit in 1999 and finally to French Pernod Ricard in 2008, which phased out Nordsoe Bitter in favour of international brands. Hans Ulrik Winther Andersen later bought the brand back, and in 2015 the flavour was refined again based on the old recipe, bringing the bitter back into Danish hands. The base is vodka, genuine liquorice and a secret spice blend.

    A Creole apothecary on Royal Street in New Orleans poured his friends cognac spiced with his own bitters. That drink would later become known as the Sazerac, and the bitters carried his name forward with it.

    The story begins in 1793, when plantation owners fled the island of San Domingo for New Orleans, then part of Spanish Louisiana, bringing their most prized possessions. Among them was the Creole-trained apothecary Antoine Amedee Peychaud, who carried with him a recipe for a liquid tonic, a bitters. Peychaud's reputation in the city grew not so much from the medicine he sold, but from the bitters he poured into cognac for friends and visitors at his apothecary. The drink was first served in 1838 from his shop at 437 Royal Street and grew into the city's signature cocktail, the Sazerac. Today Peychaud's is produced by the Sazerac Company, mainly at the Buffalo Trace Distillery in Kentucky.

    Poli Super Taurus Bitter Veneto is an Italian Liqueur at 25% from Poli Distillerie in Schiavon, Veneto, made through a natural infusion of citrus peel, bittering herbs and spices in alcohol.

    The bitter was named after a Super Taurus truck that arrived at the distillery in 1948, one of the first vehicles of its kind seen in the area — an event that drew the whole village. The powerful, robust bitter was made to match the strength of its namesake, and it was enjoyed as a celebration of Italy's post-war economic recovery.

    The production still follows the same method: citrus peel, gentian, liquorice root and other bittering botanical extracts are slowly steeped in alcohol until the characteristic bittersweet profile is reached.

    The base formula dates back to 1752, when pharmacist Abraham Kunze in Riga created a medicinal tonic drawing on balsam recipes that already had roots stretching back to the 1500s. Legend has it that the balsam saved Catherine the Great herself from stomach troubles during a visit to the city. The recipe holds 24 ingredients, including birch shoots, raspberry, ginger, black peppercorns, peppermint, lemon leaves and honey, most of them botanicals that are infused before being blended and rested in large oak barrels. Today only the distillery's Head Liquor Master and his two apprentices know the exact ratios. The Cherry edition builds on that dark herbal base with a clear cherry character, giving a sweeter, more approachable route into Riga Black Balsam.

    Riga Black Balsam Herbal Bitter is a Latvian herbal bitter at 45% ABV, bottled at 70 cl.

    The recipe dates back to 1752, when pharmacist Abraham Kunze in Riga created a medicinal tonic drawing on balsam traditions that already reached back to the 1500s. Legend has it the balsam saved Catherine the Great from stomach trouble during a visit to the city. The recipe holds 24 ingredients, including birch shoots, raspberry, ginger, black peppercorns, peppermint, lemon leaves and honey, most of which are infused individually before being blended and rested in large oak barrels to develop the characteristic strength and light bitter-sweetness. The recipe was lost during the Second World War but was recreated by former employees and has since been kept unchanged, known only to the distillery's Head Liquor Master and his two apprentices.

The story is told by police officer Axel Niebe from Nexø, who in 1909 watched how the firewood and ship provisioning firm H.S. Munch made "ejn soder syp" for the thirsty dockworkers, who got their "blødda" whenever the slipway was greased with soap during ship haul-outs. The officer only revealed the story in 1964. The dram is bottled in a distinctive retro ceramic bottle and is a cinnamon-spiced cherry dram with a warm, unique flavour.

    In the cellars of the Zwack family in Budapest stand casks that have aged herbal liqueur for more than 85 years. In one of them, Unicum Riserva takes on its first layer of character, before it gains a second from a completely different world, the Hungarian Tokaj wine region.

    Unicum Riserva is the Zwack family’s super-premium take on the classic Unicum, and it stands apart through its double ageing process. The first stage takes place in the largest and oldest oak cask in Zwack’s cellar, a cask that over decades has developed a thick coating the family calls "black honey", lending the liqueur extra depth. From there, the herbal liqueur is moved into casks from Izabella Zwack’s Dobogó winery, previously used to age Tokaji wine. This gives Unicum Riserva a softer, more fruit-driven character, with a hint of dried apricot layered over the familiar bittersweet Unicum taste.
