Noilly Prat Vermouth Dry is a French dry vermouth from Maison Noilly Prat in Marseillan, made from white wine infused with a secret blend of herbs and spices, with an alcohol strength of 18%. The house was founded in 1813 by herbalist Joseph Noilly, who developed the recipe roughly 50 years before the Italian house of Martini, creating France's first vermouth. The wine, made from Picpoul and Clairette grapes grown in the Languedoc, undergoes the house's signature method known as L'Enclos: after eight months in Canadian oak casks, the wine is transferred to half-hogsheads of Limousin oak, where it matures outdoors beneath the open sky for up to a year, exposed to Mediterranean sun and the salt air of the Étang de Thau. The oxidative depth this creates has made Noilly Prat Dry a cornerstone of the classic Dry Martini cocktail.
