PX & Oloroso – 2nd Edition (2025) is a sweet and elegant single malt whisky that combines the complexity of sherry casks with a touch of smoky finesse. It is matured in both Pedro Ximénez (PX) and Oloroso sherry casks, resulting in a deep and rich flavor profile with notes of dried fruits, apple pastry, and earthy sweetness.

The whisky is made from Odyssey barley, pale malt, and beechwood smoked malt, adding subtle warmth and smoke to its otherwise soft and oily mouthfeel. It balances sweetness and complexity with a lightly spiced finish and a hint of beechwood smoke that adds character without overpowering.

With 5 years of cask maturation and a clearly sherry-driven style, this second edition of the PX & Oloroso series is a modern take on a sherry-saturated dram with personality and finesse. Bottled in October 2025 and crafted for those who appreciate both sweetness and structure in their whisky.

Thy Whisky was born out of the idea of making a distinctive whisky from the good organic grain that they grow themselves on their family farm Gyrup here in Thy. And chasing new flavor notes by working with old and new grains in their malting process.
