Cognac VS de Pradière is made exclusively from Ugni Blanc grapes grown in the Petite Champagne area of the Cognac region and aged in oak barrels for 3 years. This very limited edition from Compagnie des Indes (CDI) is called Kaiman. The name refers to the alligator-like reptile that, like the rum, also has a strong bite. Only 500 bottles were made worldwide of this very special rum. It is a blend of traditional rum from Guadeloupe, distilled way back in 1973. 10 years ago, the rum was moved to a much larger cask of 1000 liters. It is then blended together with 2 casks where the rum was distilled in 1993. The two casks consist of rum from Guyana and the three well-known stills; Savalle, Enmore and Uitvlugt, and Jamaica from Wedderburn. The blended consists of 72.2% Guadeloupe from 1973 and 27.8% of Guyana/Jamaica. Try Compagnie des Indes Kaiman if you want to taste a very special rum with a good bite.
