Balvenie 12 Year Old Montilla Cask is a limited edition Speyside single malt with 47.3% ABV, matured in casks seasoned with sweet Montilla wine – a Spanish counterpart to sherry – adding warmth, fruit, and spice to Balvenie’s classic honeyed profile.

This release is part of Balvenie’s A Collection of Curious Casks, where the distillery explores different types of cask maturation. Selected by malt master Kelsey McKechnie, the whisky is aged for 12 years in European oak casks previously filled with Montilla wine from Andalusia. The result is a soft and complex whisky with a clear vinous character and elevated strength that enhances its flavor nuances.

The nose is fresh and delicate with notes of floral honey, light sugary tones, and gently toasted oak. The palate opens with sweet caramel, followed by rich vanilla, dried apricots, and warm spices. The finish is refreshing and balanced, with fruit and wood in elegant harmony.

The Balvenie Tun 1509 Batch 7 is a premium, non-age statement single malt whisky, bottled at 52.4% ABV. This rich whisky is the result of blending 21 different casks, which include a combination of American oak and European sherry casks. After being blended together, the whisky is allowed to marry in a special vat called the Tun 1509, where the flavors integrate over several months before bottling. The result is a smooth and flavorful whisky with notes of malt, honey, dried fruit, cinnamon, and ginger. It is hand-bottled at the Balvenie Distillery in Speyside, reflecting the distillery's expertise in whisky production.

Banyuls Rimage – Maison Parcé Frères – Domaine Augustin – Vin Doux Naturel with freshness and depth

Banyuls Rimage is a classic Vin Doux Naturel from southern France, made from Grenache Noir harvested at optimal ripeness. The grapes come from steep, schist-rich vineyards that cannot be mechanized, where both red and white grape varieties are grown at varying altitudes – from 10 to 350 meters above sea level – with a northeast-facing orientation.

The wine undergoes alcoholic fermentation in stainless steel tanks, followed by “mutage sur grains” – the addition of vinic alcohol during the still-active maceration. Five weeks of extraction with daily pumping over ensure maximum aroma and structure from the grape skins. It is aged in a reduced environment and bottled early to preserve freshness and fruit intensity.

The flavor profile is generous and full-bodied, with an intense nose of small red fruits, black cherry, blackberry, blackcurrant, and blueberry jam. On the palate, it is rich in tannins, juicy, and impressively long. It pairs beautifully with blue cheese, chocolate desserts, figs, or even pigs in blankets. Best served at 12–16°C.

A Banyuls with both freshness and power – perfect for the dessert table or as an elegant glass on its own.

The independent Danish rum bottler Nobilis Roma's 23rd release comes from one of the world's most famous distilleries on the island of Barbados. It is a molasses-based rum and was distilled in July 2006 and has been matured for 8 years in the tropical climate of Barbados and 8 years in a continental climate.
