Whisky-Flambéed Pork Shank, serves 2, with Søgaard's Whisky
1 good-sized pork shank,
1 tbsp. coarse salt,
4 bay leaves,
4 cl. Vindblæst (Søgaard's Whisky),
2 large red onions,
750 g root vegetables,
4 plum tomatoes,
2 tbsp. olive oil,
Salt and freshly ground pepper,
1 dl. vegetable broth,
1 handful of fresh thyme.

• Score the shank with a sharp knife, being careful not to cut all the way into the meat. Rub thoroughly with salt and insert bay leaves.
• Pour a bit of oil into an ovenproof dish and place the shank vertically, baking it at 150 degrees Celsius for 1 hour. Add a bit of broth if the bottom starts to dry out.
• Peel and rinse the root vegetables, cutting them into coarse pieces. Peel the red onions and cut them into wedges.

Rinse and halve the tomatoes.
• Lift the shank out of the dish, add the root vegetables and tomatoes. Drizzle olive oil over it, season with salt and pepper, and sprinkle with thyme. Place the pork shank back into the dish and continue roasting in the oven at 150 degrees Celsius for 1 hour and 45 minutes. Increase the temperature to 230 degrees Celsius and make the crackling crispy for 10-15 minutes. Remember to keep an eye on it.
• Take the shank out and flambe everything with whisky before garnishing with fresh thyme.

About Søgaard's Whisky:
"Windblown is a unique whisky series produced in Denmark, with flavor notes from the agricultural land on four of Denmark's many islands. Throughout history, whisky has been produced in Scotland, and Denmark conveniently lies on the same latitude, making both the environment and climate suitable for whisky production. This fact, combined with a genuine appreciation for the 'water of life' and a true creative spirit, is the background for a unique collaboration between four farmers and Søgaard's Distillery.

In the spring of 2018, a batch of the same organic seed was delivered to each of the four farmers on the islands of Livø, Læsø, Fur, and Egholm. A special malt barley called 'Odyssey,' suitable for whisky production, was used. The goal was to create the best possible malt barley for the production.

After the harvest in late summer 2018, the barley from each of the four islands was malted separately, and the production was ready to start in the spring of 2019 at Søgaard's Distillery in Aalborg. The first whisky was laid down in oak barrels imported from the renowned whiskey brand Jack Daniel’s, and then it was just a matter of patiently waiting for three years while the aging process took place.

The aging process is also a story in itself. The finished raw spirit was sailed to Livø, where it was stored at Livø Avlsgård with Bente and Karsten Kjærgaard. The oak barrels were placed in the old barn on the farm, with the right temperature, light, and daily monitoring, ensuring the final products had the best conditions throughout their lifespan.

Denmark has thus obtained not just one but four organic island whiskies, each with its own distinctive characteristics and all of very high quality.



About the cookbook: Mad med promiller
Over the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream.
