The Bird and the Churchkey is a rare beer and gin bar. They take the noble gin & tonic very seriously - they have 20 different versions on the menu. Here they have created one at Scapegrace, where the gin's elegant expression is complemented by mint and citrus peel.

Procedure


Pour a few ice cubes into a highball glass.
Add the gin and slowly add the tonic to preserve the carbonation.
Cut a piece of skin off a grapefruit, but only the peel. The white layer under the peel should not be included, as it can easily overpower the other nuances.
Add the mint and serve.

About Scapegrace

A "scapegrace" is a kind of rogue; someone who turns their back on convention and goes their own way. So where, you might ask, does Scapegrace deviate from the beaten path? It's not that you are surprised by the botanicals found in their wonderful
classic gin. Instead, it offers a distinctive elegance. Gin is definitely woven into New Zealand's history by the English colonists, but they didn't have a tradition of producing the noble beverage themselves. That changed at the beginning of this millennium, but there are still only a few gin producers on the island. One of them is Rogue Society, who launched their first gin in 2014 after 2 years of intense development. Their vision was completed in the selection of 12 botanicals, including cinnamon, cardamom, licorice, cloves, citrus peel and orris root. All botanicals are distilled on a neutral wheat-based spirit in a pot still from the world's oldest distillation apparatus manufacturer: John Dore & Co Ltd.

The expression in Scapegrace Classic is on the spicy side of classic, so the citrus notes only serve as a sounding board for the other ingredients. It has an elegant expression that is easily drowned out by overly insistent mixers. Therefore, it works best when paired with more subtle flavors. Alternatively, it can be dosed in slightly larger quantities to really bring out the full impact of the citrus notes, but it also works well on its own.
