Been Apart is the second release from the distillery and is a tribute to all things French. This hazy spirit is full-bodied yet sleek and in its simplicity reflects the calm before the storm. Inspired by Bonaparte's rebelliousness, toasted baguettes, the cheeky Moulin Rouge and sophisticated French wines. The French identity is handed down to the spirit via maturation in a combination of the finest brandy casks from Burgundy and Rivesaltes Vins doux naturels. Been Apart is developed on råsprit that has matured for three years, providing a rich flavour and a unique combination of both natural and technologically accelerated maturation. This captivating spirit offers a spicy flavor with underlying oak notes. Years feel like days... With the ambition to create the spirits of the future, we take craft and science and push them to their limits to show what barrel-aged products can be. Theory and Methodology We source the highest quality malt distillate, primarily from Scotland. By letting great distilleries focus on their craft, we can focus solely on our maturation processes. We put the young whisky in our Jensen Reactor along with selected oak staves from old used barrels. We select and assemble the barrels based on the vision we have for the final product. This enables us to create and shape exactly the product we want. To transform a young spirit into a finished product, we use a number of methods to accelerate maturation, both to age and to create with a purpose.

We use: - Elevated heat profiles and operating temperatures - Ultrasonic wave extraction - Inorganic acid catalysts - Elevated wood to liquid rates, both by working with our barrels and wood chips cut from them - Strictly controlled micro-oxygenation processes - Use of flow rates and constant circulation of the liquid. The end result is a mature spirit with a flavor and expression that matches something much, much older.
