    Here time works faster than in a Scottish cellar. The casks give up their contents at a pace no northern European warehouse can match, and evaporation takes its toll every single year.

    Opthimus is the Oliver family's answer to what that heat can be used for, if you have the patience to wait anyway.

    Opthimus 18 Year Cum Laude 2019 is a Dominican Rum from Oliver & Oliver, matured in ex-Bourbon casks of American white oak and bottled at 38%.

    Oliver & Oliver is a family business with Cuban roots. The family left Cuba in 1959, and only in the early 1990s was the business rebuilt in the Dominican Republic, where it is now based in Hato Nuevo outside Santo Domingo. The house does not distil itself, but blends and matures molasses-based distillates under the direction of maestro ronero Don Pedro Oliver.

    Maturation follows the Sistema Solera, the Spanish pyramid system originally developed for sherry. Rum of different ages is continually blended in a system of casks, so that a portion of the oldest rum always carries forward. The number 18 on the label refers to the oldest rum in the blend, not the whole content. That is worth knowing if you come from the world of whisky, where the age statement means exactly the opposite.

    Cum Laude is Oliver & Oliver's designation for the bottlings the house itself considers top marks, and it is only used for select vintages. This one was bottled in 2019 in a run of 1,000 bottles. Each bottle is filled, labelled and numbered by hand, and the label is signed by the maestro ronero. The casks are former Bourbon casks from Kentucky of American white oak, and they are what deliver the vanilla, coconut and soft timber running through the whole flavour. The 38% is a deliberate choice by the house: the rum is built for softness rather than power.

    Tasting Notes

    Nose

    Warm vanilla and light honey first. Behind that comes toffee, dried fig and a mild cocoa note, and right at the end a touch of pipe tobacco and dry oak.

    Palate

    Soft and round. Honey and caramel carry the start, then dark chocolate and roasted coffee unfold, and there is a lightly peppery edge and a touch of ginger in the background that keeps the sweetness in check.

    Finish

    Long and spiced-sweet. The vanilla lingers longest, along with sweet oak and a dry tobacco note right at the very end.

    Dos Maderas Caribbean Ron Anejo 5+5 Years is a Rum, blended from Barbados and Guyana, matured 5 years in the Caribbean in ex-bourbon casks and a further 5 years in Spain in ex-sherry casks, bottled at 40%.

    The rum combines two countries with their own distinct rum styles, Barbados and Guyana, in a delicate blend matured in two stages. After the initial five-year maturation in the Caribbean, the rum is shipped to Spain, where it matures for a further five years in casks that previously held sherry, giving it its name "two types of wood" and a doubly layered flavour profile.

    El Dorado 15 Year is a Demerara Rum from Guyana, matured for at least 15 years in oak casks and bottled at 43%.

    The 15 Year expression builds on the house's classic Demerara style, but with the extra depth and complexity that three additional years of cask ageing bring. The rum is distilled at Demerara Distillers' Diamond plant, where the blending of several historic still styles results in a rum with an unusually broad flavour palette for its price range.

    Nose

    Brown sugar, honey and dried fruit alongside dark coffee, candied orange, almonds, dark chocolate, pepper and rich vanilla, complemented by sherry, fruitcake, liquorice and anise with a hint of espresso.

    Palate

    Syrupy with brown sugar and toffee, beautifully rounded with grilled tropical fruit and smooth, oaky spice – silky and full-bodied, with a dry to lightly honeyed entry and a mid-palate of tar, tobacco, old oak and molasses.

    Finish

    Long with dark spices, brandy-like, and notes of dark caramel.

    Habitation St. Etienne Martinique Très Vieux VSOP is an AOC Martinique Rhum Agricole, matured in American oak casks and bottled at 45%.

    The rum is distilled at the Simon distillery in Le François and then aged in the historic cellars at Habitation Saint-Étienne itself in Gros-Morne, where the Hayot family has restored the old sugarcane plantation since 1994. Because it is a Rhum Agricole, it is pressed exclusively from fresh sugarcane juice rather than molasses, giving it a greener, creole starting point that the long ageing in American oak then layers with caramel and spice.

    Tasting notes

    Nose

    Candied fruit such as apricot, peach and cantaloupe, followed by roasted almonds, caramel, milky coffee and a touch of clove, with a hint of grape must.

    Palate

    Broad and warm on the attack, settling softly on the palate without heaviness, smooth and round with an aromatic finish mirroring the nose.

    Finish

    Creole and spiced with a fine, lingering warmth from the long cask ageing.
