Ron Cristobal Santa Maria Red Wine Cask Finish is a Dominican Rum finished in red wine casks and bottled at 42%.
Like the rest of the Santa Maria series, the base rum is distilled at Alcoholes Finos Dominicanos and aged in traditional oak casks before being transferred to casks that previously held red wine from European vineyards. The casks impart tannins and colour compounds from the grapes not otherwise found in a standard Dominican Rum, and the result sits somewhere between rum and a lightly wine-like dessert spirit.
The red wine cask pulls fruit and tannin forward without masking the rum's underlying character of brown sugar and tropical fruit. It's a finish well suited to closing out a meal or standing alone as an afternoon dram.
