Bisgaardsmark Børglum Kloster Single Malt Danish Whisky is a limited single malt from Søgaard Destilleri in Aalborg, bottled at 46.1% in a 50 cl bottle and presented as a gift set with a whisky glass. Named after Børglum Monastery — an Augustinian monastery dating back to the 12th century in northern Jutland — the whisky pays tribute to the region's deep cultural history. Only 501 bottles were produced, bottled on 13 November 2023. Søgaard Destilleri is part of Søgaards Bryghus in Aalborg, a project that started in 2018 when the distillery equipment was ordered from CARL, a German firm founded in 1869. The distillery focuses on terroir-driven Danish whisky production using grain from North Jutland's islands. The whisky is matured in bourbon oak casks and is unpeated.
Tasting notes
Nose
Soft and approachable with sweet malt and fresh barley grain. Vanilla and light caramel from the bourbon cask appear early, with delicate floral notes and a hint of honey in the background.
Palate
Round and harmonious. Sweet malt and caramel lead, followed by fresh fruit notes — hints of pear and green apple. A gentle warming spice develops toward the finish.
Finish
Medium-long and smooth, with lingering vanilla and light oak. A clean, fresh close that invites another sip.
