Ceviche with king prawns and Ron Colon Rumzcal - Food with a difference by Jan Ohrt

Ceviche with king prawns and Ron Colón Rumzcal, 2 pers.

1/2 kilo king prawns without shell, preferably frozen,
2 fresh limes,
2. cl. Rumzcal,
2 ripe avocados,
1/2 red onion,
1/2 kilo tomatoes,
2 jalapenos,
salt and pepper, optionally freshly chopped parsley or coriander for garnish and flavor.

- Place the thawed and dried prawns in a bowl and sprinkle with a little sea salt and freshly ground pepper.
- Pour the juice from the two limes and your Rumzcal over, stir, cover and let it rest in the fridge for a good half hour.
- Cut the tomatoes into small boats and remove the insides, chop finely and set aside.
- Finely chop your chili and half your red onion, peel your avocado and cut it into small pieces.
- Mix it all up in the bowl with the shrimp, garnish with freshly chopped greens and serve immediately.

Preferably with nachos or freshly baked bread. PS: If you don't like prawns, they can be replaced with fresh white fish such as cod and pollack cut into small pieces.

Some of us have probably toyed with the idea of combining good rum with good tequila and it's certainly not the easiest exercise. The trick is to find the perfect balance so that the flavor of baked agave does not become too dominant and overpower the fine and delicate nuances of the rum. With Ron Colón, it seems to have succeeded. With a careful blend of their dark barrel-aged rum and the renowned Maguey Espadin Mezcal in the right ratio, they have achieved a unique expression of flavor and aroma, bringing together the best of El Salvador and authentic Mexico.

The color is slightly clear golden with a medium structure. The aroma immediately gives you a sense of where we're headed, rich with tropical earth and smoke from the baked agave without ever overpowering the fruity sweetness at the back of the nose. On the palate, it continues with a fine balance of charcoal and a little smoke, rounded out beautifully with the natural and innate nuances of rum. The finish is long, warm and pleasant with a nice tropical feel.

Play with it in your cocktails and don't be afraid to bring it into the kitchen. In both cases, there are good surprises waiting for you

About the cookbook: Mad med promiller
Over the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream. With the help of a good friend of the house, Jan Ohrt, the book Mad med Promiller #1 is now a reality and it was presented on Saturday, August 5, 2023 at an informal premiere in the more than 400m2 store at Vejstruprødvej 15 in Sjølund.
