Danish Whisky

Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

  • Bottle of Mosgaard Peated Bourbon Cask Peated Organic Danish Single Malt Whisky 50 cl
    Item no.: 222452-77786

Smoke and bourbon. A pairing that doesn't happen all that often – but when it does, a new dimension opens in peated whisky. Mosgaard Peated Bourbon Cask is proof that peat doesn't need sherry to be complex.

    Expert description

Mosgaard Peated Bourbon Cask is an organic Peated Danish Single Malt Whisky bottled at 49.2% from Mosgaard Distillery in Odense. The whisky is made from peated malt and matured in ex-bourbon casks, which add vanilla, caramel and a fresh, light fruitiness to the smoky expression. Unlike peated whiskies matured in ex-sherry casks, the bourbon cask gives a lighter and more approachable smoke style. Bottled in 50 cl format.

    Tasting notes

    Nose

Smoky peat with bourbon vanilla and caramel underneath. Light grain fruitiness and a fresh, approachable smoke intensity.

    Palate

Soft smoke at 49.2% with the organic grain's freshness and the bourbon cask's sweet vanilla. More fruity and light than typical heavy-peat styles. A good entry point into peated whisky.

    Finish

Medium to long with lingering smoke and a soft vanilla-sweet close.

    Did you know?

Most of the world's best-known peated whiskies – from Islay and Scotland – use ex-sherry casks for finishing. The bourbon cask is rarer in the peated category. It gives a completely different flavour dimension: lighter, fresher and with a grainy quality that lets the smoke stand clearly without drowning it in heavy sherry sweetness.

Non-chill filtered: Peated malt is produced by drying the germinated barley over smoke from peat – burnt plant material from marshland. Peat from different regions has very different character: Scottish Islay peat is powerful and medicinal, while Danish peat is typically softer and more earthy. Mosgaard Dark Peat is an example of Danish peated whisky on organic grain.

    Expert description

Nyborg Distillery Bourbon Cask is an organic Danish Single Malt Whisky bottled at 59% cask strength from the distillery's early production at Ørbæk Brewery. The organic Funen distillate matured on a bourbon cask of American white oak, contributing classic vanilla, caramel and grain roundness. A bourbon cask is the world's most classic cask type and gives the most direct expression of the distillate's character – here the organic grain from Ørbæk. A bottling that captures the essence of the Ørbæk era in one bottle.

Funen meets Islay. An organic distillate from Ørbæk Brewery finished on a Laphroaig cask – perhaps the most unlikely combination in Danish whisky history. The result: 69%, raw and smoky.

    Expert description

Nyborg Distillery Laphroaig Finish is an organic Danish Single Malt Whisky bottled at 69% cask strength from the distillery's early Ørbæk era. The organic Funen distillate was finished on a cask from Laphroaig – one of Islay's most famous heavily peated distilleries. The finish adds smoke, peat and iodine to the otherwise clean and organic Danish distillate. The extreme ABV of 69% is uncut and demands attention. A bottling that is unique in every respect – and will never be repeated.

    Tasting notes

    Nose

Powerful smoke and peat from the Laphroaig cask. Iodine and coastline. Beneath the smoke the organic distillate is present with grain and a light sweetness.

    Palate

Intense and explosive at 69% – water is strictly necessary. Smoke and peat dominate, but there is an underlying Danish organic sweetness behind the Islay character. Iodine and sea salt.

    Finish

    Expert description

Oloroso Cask Black Mikkeller Spirits Small Batch is a New Make Malt Spirit at 43%, distilled at Braunstein Distillery from Mikkeller Black imperial stout and briefly matured in Oloroso sherry casks. This collaboration pairs Mikkeller's brewing expertise with Braunstein's distillation knowledge. The Oloroso casks contribute rich, nutty notes and a suggestion of dark fruit to the young spirit. The result is an idiosyncratic spirit type that refuses to be called either whisky or beer.

    Tasting notes

    Nose

Toasted nuts, light dried fruit and pale caramel. The Oloroso cask adds a discreet nuttiness and a faint sherry aroma.

    Palate

Rye is a harder grain to work with than barley. But it is also a grain with more character — spicy, peppery, dry and more insistent in flavour. Reinheart has matured their rye for six years and bottled it as a Small Batch. This is a more mature expression than the younger releases and shows what time does to rye.

    Expert description

Reinheart Rye Whiskey 6 Year Small Batch is a Danish Rye Whiskey at 45%, bottled at 50 cl. It is matured for six years and produced as a Small Batch bottling — meaning from a limited number of casks at a time. Reinheart is a Danish micro-distillery producing rye and malt whiskies with a focus on craftsmanship and Danish raw materials. Six years is a respectable age for a Danish rye whiskey and gives the cask time to soften rye's natural edges.

    Tasting notes

    Nose

Peppery and spicy with characteristic rye aroma. Sweet vanilla and caramel from the cask. Lightly bakery-like — rye bread and a hint of cinnamon stick.

    Palate

The rye character is central — dry, spicy and insistent with oak and caramel in the background. 45% is a good strength for this expression — enough to carry the flavour without being harsh.

2022. Sall Whisky opened its doors for the first bottle. Not just any bottle – the first official release from a Danish single farm distillery on Djursland with home-grown barley.

    Expert description

Sall Whisky Inaugural Release 2022 is a Danish Single Malt Whisky bottled at 52.2% from Sall Whisky in Djursland, Jutland. It is the distillery's very first official release – the historic moment when Sall Whisky's single farm malt goes from being a project to being a product. Sall Whisky specialises in growing their own barley, mashing, fermenting and distilling everything on the farm. Inaugural Release 2022 is from the very first casks and carries the youngest character of the distillery's work – a historic bottle for everyone following Danish whisky.

    Tasting notes

    Nose

Fresh and organic – the young Jutland single farm malt is clear with fruitiness and grain character. A clean, slightly open nose that hints at what more maturation will bring.

    Palate

52.2% gives good body. Organic grain, light fruitiness and a freshness characteristic of the first years. Distillate quality is clear even at the young age.

    Finish

Fresh and relatively short – a young distillery's signature.

High. Inaugural Release – the very first official release from a distillery – is by definition a rare historic bottle. Sall Whisky's Inaugural Release 2022 marks the start of a unique single farm project, and it is no longer in production.

    Did you know?

Sall Whisky is one of very few places in the world that can truly operate as a "single farm" distillery – from soil to bottle. The barley that grows in the fields at Sall on Djursland is the same barley that ends up in Inaugural Release 2022. No middlemen, no external malting. It is a rare and unique model.

  • Bottle of Sall Whisky 5 Year Fondillon Cask Organic Single Malt Danish Whisky
    Item no.: 05555-74123

Fondillón is the wine of kings — produced in tiny quantities near Alicante in Spain, rarely seen beyond the Iberian peninsula. Maturing Danish whisky in these casks is not merely an experiment. It is the world's first distillery bottling of whisky finished in Fondillón casks — and it was made in Denmark.

    Expert description

Sall Whisky 5 Year Fondillon Cask is a Danish Single Malt Whisky matured in ex-bourbon casks and finished in rare Fondillón casks from Alicante, bottled at 55.4% Vol. This is a historic release: World First Ex-Fondillón Distillery Bottling.

Fondillón is an oxidative red wine from the Monastrell grape, produced exclusively in the Alicante region in quantities so small that it rarely reaches international markets. Sall Whisky is a Single Farm Single Malt distillery near Ebeltoft in Central Jutland with full control over barley, malting and maturation. The result is a 100% organic Danish whisky at 55.4% with a wine cask profile never previously seen in Danish whisky history. 340 bottles, no chill filtration, no colouring added.

    Tasting notes

    Nose

Dried orange peel and dark raisins from the Fondillón cask, with hints of fig and old wine cellar. Beneath the wine character lies Sall Whisky's clean malt and a gentle nutty sweetness.

    Palate

Powerful and vinous with dark dried fruit, orange and a suggestion of dark chocolate. Malt and oak provide a steady foundation as the Fondillón cask takes clear command.

    Finish

Long and lingering with dried fruits and a fine tannin grip from the Fondillón wine. Warm and complex — unlike almost anything else in Danish whisky.

    Investment potential

Medium. 340 bottles worldwide and a documented "world first" in a growing Danish whisky category makes this of clear interest to collectors. Fondillón casks are extremely rare and repeat releases are highly unlikely.

    Did you know?

Fondillón is documented in historical records from the 16th century, when it was served at European royal courts — hence the name "Wine of Kings". Today it is produced by only a handful of bodegas in the Alicante region, and Sall Whisky is the first distillery in the world to have bottled a distillate matured in these very casks.

Cask number one. Sall Whisky's first retailer single cask – bottled from a single oloroso sherry cask for the retailers who wanted to be first with an exclusive edition of the North Jutland single farm malt.

    Expert description

Sall Whisky Forhandlernes Fad #1 Oloroso Cask is a Danish Single Malt Whisky bottled at 50.3% from Sall Whisky in Djursland. It is the distillery's first "retailer cask" – a single cask chosen and bottled specifically for selected retailers. The cask is an oloroso sherry cask, which adds a sweet, nutty sherry character with dark fruits and dried grapes to Sall Whisky's organic single farm malt. 50.3% is a good strength to show the sherry cask's nuances without losing the malt's grain character.

    Tasting notes

    Nose

The oloroso sherry's sweet, nutty character meets Sall Whisky's clean Jutland single farm malt. Dried grapes, hazelnut and a light spiciness from the sherry cask.

    Palate

50.3% gives a good balance. The sherry cask's sweetness and nuts are clear, but the grain base is still visible – lightly fruity and organic beneath the classic oloroso character.

    Finish

Long and warm with oloroso sherry's nutty and lightly sweet close.

    Did you know?

Oloroso is one of the driest sherry styles – it is made without the protective biological flor film that characterises fino and manzanilla, and instead oxidises slowly. This gives oloroso casks a dense, nutty and sweet profile that is easily recognisable in whisky. For Sall Whisky's clean single farm malt, it is an exciting partnership.

    Expert description

Sall Whisky Founders Cask no 1 Kåre is a Danish Single Malt Whisky bottled at 55.1% from Sall Whisky in Djursland, Jutland. The bottle is 50 cl – slightly smaller than standard – and was bottled in very limited numbers.

    Tasting notes

    Nose

55.1% cask strength gives intensity. Sall Whisky's clean organic single farm malt is central, with the cask character clear over the grain base. Fruity and lightly spiced.

    Palate

    Item no.: 055551-77895

MULD is what the soil can do. Sall Whisky grows and harvests its own spring barley on its own fields in East Jutland — and here begins the story of a whisky that genuinely tastes of the place it came from.

    Expert description

Sall Whisky MULD 1.2 is a Danish Single Malt Whisky matured in ex-bourbon casks and bottled at 50.9% Vol. It is the second release in the MULD series — a distillate-driven expression where the character of the grain and malt takes precedence over cask influence.

Sall Whisky is a Single Farm Single Malt distillery near Ebeltoft in Central Jutland, built around a commitment to full traceability from field to bottle. MULD 1.2 is produced from Prospect and Evergreen spring barley grown on the Kvolbaek and Stadsaard fields, malted as Pale and Vienna for a balanced, fruity malt profile. Yeast strains Distillamax MW and Kveik Hornindal add further complexity. Three years in ex-bourbon casks have given light fruit notes and a gentle sweetness without overshadowing the clean, terroir-driven malt character. Bottled in 624 numbered bottles of 70cl — 100% organic and traceable to field and batch.

    Tasting notes

    Nose

Fresh and malt-forward. Green apple and pear open things up, with honey biscuit and a light nutty note in the background. Gentle floral quality — almost like freshly malted barley.

    Palate

Sweet and direct. The malt character is front and centre, not overshadowed by the cask. Light honey, fresh citrus and a hint of ginger give a lively, clean profile.

    Finish

Short to medium with a fresh fruity tone and gentle warmth. Like buttered toast — simple and satisfying.

    Expert description

Sall Whisky TØRV 2.4 is a peated Organic Danish Single Malt Whisky bottled at 51.7% from Sall Whisky in Djursland, Jutland. The whisky is batch 2.4 of the ongoing TØRV series – the distillery's peated expression. Sall Whisky operates from a single farm concept: they grow their own organic barley on the adjacent farm, mash, ferment and distil it themselves. The TØRV series uses peated malt and gives a smoky character that is rare in Danish whisky. 51.7% gives good access to the flavour nuances without dilution.

    Tasting notes

    Nose

Smoke and peat with the organic Jutland grain's natural fruitiness behind it. A fresh and clean smoky nose with some nuttiness and a light sweetness from the organic malt.

    Palate

51.7% gives body and gentle warmth. The peat smoke is present but not dominant – the clean single farm malt is still visible with fruity and grainy tones beneath the smoke.

Stauning El Clásico 2022 Vermouth Finish is a Danish Rye Whisky finished in vermouth casks and bottled at 45.7% without chill filtration. The expression is part of the Research Series and was made by finishing Stauning's rye whisky in vermouth casks. Vermouth is an aromatised wine with botanical ingredients – herbs, flowers and spices – and the casks add a dry, floral dimension to the rye's natural spiciness.

El Clásico references the classic encounter – grain meets wine – and the result is a whisky unlike any other in Stauning's range.

    Tasting notes

    Nose

Botanical and fresh. Dry herbs, light florals and citrus from the vermouth with the rye's natural spiced grain in the background.

    Palate

Light and elegant. The rye's spiciness meets botanical notes – anise, citrus and mild herbs – with a dry sweetness and florality from the vermouth.

    Finish

Medium-long and dry. Botanical traces and lightly spiced rye linger with a pleasant bitterness at the close.

    Did you know?

Vermouth is typically associated with cocktails like the Martini and Negroni. Stauning inverts the convention – instead of vermouth going into the glass, it goes into the cask, giving the rye whisky a botanical dimension you'd normally only find in a cocktail.

    Item no.: 22227865400-508

Heather on the moors of West Jutland. Stauning has used it since the beginning – an ingredient that gives HEATHER its floral and honeyed character.

    Expert description

Stauning HEATHER September 2017 is a Danish Single Malt Whisky bottled at 48.7% and made with heather added during the drying of the malt. Distilled 2013-2014 and released in September 2017. Heather is a traditional ingredient in Nordic brewing and distilling, and Stauning revives the tradition in the HEATHER series. The result is a whisky with a unique floral and honeyed profile – clearly different from the rest of Stauning's range.

HEATHER is one of Stauning's most original expressions. It is not just a variation on a theme – it is a whisky that could not come from any other region. The Jutland heather moor is the invisible ingredient.

    Tasting notes

    Nose

Heather and wildflowers, light fruits and a discreet honey sweetness. Very aromatic and fresh.

    Palate

Floral and sweet with malt, honey and heather tones. Light spice and a mild fruit core. Elegant and different.

The use of heather in whisky making has roots in medieval Nordic brewing. Stauning is one of very few modern distilleries actively reviving this practice in their HEATHER series.

Stauning Høst is a Danish Single Malt Whisky bottled at 40.5%. Stauning Whisky was founded in 2005 by nine friends in Skjern, West Jutland. • Bottle of Stauning KAOS 2016 Danish Single Malt Whisky
    Item no.: 22227865400-305

Stauning KAOS is the opposite of the system – a multi-malt whisky that blends grain types instead of keeping to one. The 2016 edition is one of the earliest releases and sets the standard for the series.

    Expert description

Stauning KAOS 2016 is a Danish Single Malt Whisky bottled at 46.5% and made from a blend of malted grain types. Distilled 2011-2013 and released in February 2016. KAOS is Stauning's most complex expression – a counterpoint to the peated single malts, characterised by fruity, creamy notes and elegant complexity. The bottling is non-chill filtered.

Stauning Whisky opened in 2005 in Skjern and has since earned international recognition for its floor malting and copper pot distillation of Danish grain. KAOS represents the experimental side of the distillery – each batch is a new composition.

    Tasting notes

    Palate

Full and smooth. Peach, honey and caramel with a spiced oak finish. Well balanced.

The KAOS name is not accidental: it refers to the chaotic blend of grain types used in distillation. Stauning deliberately experiments with the composition from batch to batch, so no two editions are identical.
