Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

This Organic Single Malt Danish Whisky Ørbæk of 64,6% is a really exciting product. In 2012, Whisky.dk stopped by Ørbæk Brewery with two empty 30L casks and asked: "Isn't that something about you guys making whisky? Will you fill our barrels with 'new make'?" And they did. About 6 years later they returned: "Now we want our whisky bottled!" And they did.
This is a blend of the two casks and only 53 bottles were bottled. Bottled on the occasion of Whiskymessen March 3, 2018.

Giljagaur is the second release in the atmospheric Christmas whisky series from the Danish Sall Whisky Distillery – a collection inspired by the 13 Icelandic Yule Lads and their dark, mythical world. Each bottle in the series pays tribute to one of these legendary figures who, according to Icelandic folklore, descend from the mountains one by one in the days leading up to Christmas, often with mischievous or frightening intentions.
This time it is Giljagaur who emerges from the ravines. Known for hiding in mountain crevices and sneaking into the cowshed at night to steal the creamy foam from milk buckets, he is one of the more cunning and playful Yule Lads. Sall has transformed this character into a Danish single malt with personality and edge – a true Christmas malt that balances tradition, storytelling, and craftsmanship.
The whisky is made from 100% Vienna malt, based on Prospect spring barley harvested in 2021 from the Gejlund field. It has matured for three years in a First Fill PX-sherry Hogshead and then received a finish in smaller First Fill Ex-Oloroso Quarter Casks. The result is a non-peated whisky with depth, sweetness, and spicy nuances – perfect for the dark winter evenings.
Only 540 bottles of this edition have been produced, all bottled at 50% ABV and delivered in 50 cl. A collector’s item for whisky lovers and a taste experience that brings both warmth and storytelling to the Christmas table.
